Shiokaze Noodles — Restaurant in Sasebo

Wow! I just had the most incredible noodle experience at Shiokaze Noodles, and I'm still dreaming about their Kujuukushima Champion noodle soup. I understand this dish recently won an award, and let me tell you – it is ABSOLUTELY DESERVED! From the first spoonful, I knew this was something special. The broth was delightfully balanced. You could taste the quality of the ingredients and especially the care that went into preparing it. The noodles themselves were cooked to perfection. It is clear that the chef is exceptional at what he does. It’s not often you taste something that so clearly stands head and shoulders above the rest, but Shiokaze Noodles has truly achieved that with this champion dish. If you're in the Sasebo area, or even if you're not, making a trip to Shiokaze Noodles for this fantastic soup is an absolute must. As an American who’s been in 7 cities so far in Japan, the gentlemen who served me was the most accommodating person I’ve met. He was kind and attentive to my needs despite my lack of Japanese speaking skills and my reservation.

The food was really tasty and refreshing. The salt ramen had a fish-base that made it taste healthy and full. The gyoza was delicious, and the guy expanded my palette by using salt as a compliment instead of soy sauce.

以前来た時に塩ラーメンの潮帆を食べたので今回は魚介しょうゆつけ麺を注文。麺の量も大盛⇒特盛⇒メガ盛りと120円単位で増量も可能。お冷やはセルフです。薬味は一味と胡椒に粗塩があります。つけ麺のスープは直火でグツグツ煮たっている状態での提供。つけ麺の注文は初めてですか？と確認があるので初めてと回答すると食べ方について詳しくレクチャー頂けました。店主さんのつけ麺に対する情熱と、より美味しく食べてほしい熱意を感じました。具材はチャーシュー二枚に煮卵の半割りと白髪ネギに少し太めに切ってある分葱。スープには新玉ねぎが浮いてます。言われるまま最初の一口目は麺をスープに半分だけ浸して食べました。まず麺のモチモチとした食感も味わえて後からダシの効いたスープの味と香りが追いかけてくることを感じられて美味しかったです。ダイエット中でなければ麺増量して最後にライスまで雑炊セットを頼んでたヤツです。 ②3年ぶりに来店。期間限定メニューもある様子。基本メニューや大盛りの仕様も変わってました。 4月限定の和牛味噌つけ麺（並）にミニチャーシューご飯と唐揚げ2個のセットを付けて注文。 注文方法もQRコード読込可能になってて便利。

食べ方指南通り何も付けずに塩味だけで一口、麺のコシと風味を感じられて美味しい。タレに付けてまた美味しい。また具材として盛り付けてあるお肉だけではなくタレにも煮込んだ際に煮崩れた肉片が結構入っててボリュームが意外とある。添えてある揚げ牛蒡も歯ごたえがあって牛蒡の風味が牛肉と合ってて美味。 タレが好みの味だったのでちょっとキャパオーバーと思いつつも雑炊セットまで追加。 雑炊セット注文時にタレを再度温め直していただけるとのことで熱々で食べられました。 少し一味を散らして風味を変えていただきましたが、美味しかったです。限定メニューなのが残念。

麺の盛りは以前は大盛（400g）→特盛（500g）→メガ盛（600g）でしたが、2025年4月現在はギガ盛（700g）→テラ盛（800g）まで選択可能になってました。
