深川あさり飯とは
『深川めし』は、古くから深川漁師の船上食として親しまれてきました。当時の『深川めし』は、主に、あさりの味噌汁をご飯にかけたぶっかけ飯のようなものであったと聞きます。また、現在では、ご飯とあさりを一緒に炊く炊き込みご飯も一般化しております。
深川あさり蒸籠めしへの想い
門前茶屋では、この土地で親しまれてきた『深川あさりめし』を、単なるご当地食を越えて、更に美味しく、より繊細な一品料理として提供したいと考え、日本料理の伝統的な技法である『炊き合わせ』を駆使し『蒸籠』で蒸しあげた『深川あさり蒸籠めし』として誕生させました。
炊き合わせと蒸籠蒸し調理法について
あさりは、毎日、新鮮なものを使用して、葱、油揚げを加えて、風味を損ねないようにふっくらと炊きあげます。そのまま冷暗所に保存して熟成を待ちます。ご飯は、良質な昆布を出汁敷きして、当店で使用するあさりから抽出したエキスを加えた炊き汁で炊きます。当店では、お客様のご注文をいただいてから蒸籠にご飯を盛り、その上に先の熟成させたあさりを乗せて高温高圧の蒸し器で一気に蒸し上げます。密封状態で短時間に高温の蒸気で蒸すので、あさりが固くならず、芳醇な味わいが更に増して、ご飯とまろやかに一体化します。これが炊き合わせの技術であり、蒸籠蒸しの力です。ぶっかけ飯や炊き込みご飯とは異なる門前茶屋でしか味わうことのできない独自の『深川あさり蒸籠飯』として、創業以来、皆様に親しまれております。門前茶屋の『元祖料亭風 深川あさり蒸籠飯』を、是非、ご賞味下さい。

Below is a review of the menu we ordered. Fukagawa rice was thick and well-prepared. The sea lettuce was very fragrant, and it was very delicious, complementing the rice and the clams. The deep-fried asparagus was also thick and matched with other vegetables and tentsuyu (with grated radish and ginger), and I felt the best. Drinks (Fuji Highball and Blue Okinawa Grapefruit) were also delicious.

However, I didn't understand the meaning of being charged 543 yen including tax for a small appetizer. Is it the culture of Tokyo? In Kyushu, I have never been charged an appetizer...
