I was watching a chipper, young YouTube vlogger talk about the recent popularity of a Tokyo neighborhood unbeknownst to me, the melodic-sounding Gakugei-Daigaku, She stopped here for a snack and a chat with the effusive young owner Jun. The doughnuts looked good enough for my husband and me to follow up and look for this shop on a particularly rainy day when nothing but a doughnut would do.
It's a compact shop but with banquette seating upholstered in a Canadian lumberjack plaid. The owner I saw on YouTube was here. Friendly and welcoming, he's from Hokkaido and uses ingredients from his home prefecture to make eight different doughnuts including Cinnamon Sugar, Chocolate Dipped, Raspberry Jam Filled, and Kinako. My husband went for the ¥400 Limoncello, while I chose the ¥420 Honey Marscarpone.
What we noticed was how freshly they fry the doughnuts. They were warm and fluffy but not overwhelming. The sweetness was light, not the heavy glaze you might find elsewhere. The limoncello had a nice tanginess that complemented the mochi chew. The honey marscarpone came as a dollop over a plain doughnut, so the creamy sweetness was nicely contained. Higuma refers to a Hokkaido grizzly bear and fits the motif quite well.

The chocolate was more of a ganache, rather than a glacé, which is what I prefer, with some candied orange peel on top. Was very good. Limoncello- was same doughnut as the chocolate, but wasn’t as fresh and had a nice lemon flavor glaze. It was ok, not our favorite. Honey Mascarpone- was still warm with a shuttle sweetness and a dollop of mascarpone. This was by far our favorite and outstanding. Lemonade- very tasty lemon drink
