We had Matsutake Ramen here and it was like we were beamed to another world after the first sip ð€€ð€€ð€€ð€€ð€€ð€€ð€€ð€€ð€€ð€€ð€€ð€€ð€€ð€€.
The ordering is easy (for foreigners like us) via the ordering machine. The seating was designed around the preparation island for the food and than around you is basically the whole noodle kitchen. I found this to be very inspiring and it created a wonderful ambiente to dine in.
The atmosphere was just great. While watching the crafting of your food you could look straight into the kitchen were, I guess, the fresh noodles were made including more explanation about their connectedness to local sourcing and early control of the whole process in producing then making and finally crafting the food on the walls surrounding the dining area.
At the time we were there they also had an intern or new worker at the site and trained her. It was really nice to watch this training process.
Finally, the food, we had matsutake ramen, was served and it smelled, tasted otherworldy. After we finished our food the taste of matsutake lingered in our mouths and we enjoyed it on our way back to the hotel (up some of those nasty hills xD). Now this sounds like I an overdramatic description but this was truly our experience.

The ramen itself is different from traditional ones and it is definitely a culinary experience. This place also takes credit cards which I know is an extra point to a lot of folks out there.
I had their Tsukemen as well as their seasonal Shrimp ramen. Both were very different from what I have tasted so far but the flavor profiles definitely worked. The chefs also introduce where some of the main ingredients were sourced from so it felt like a culinary experience fr. Price point is like 9~12 USD per menu so def worth a visit. The restaurant is also spacious and the kitchen is clean. They always have some sort of seasonal menu going on so I plan on going back too.
Servicewise I was also impressed cause I ordered two bowls and they were carefully eyeing when I was about to finish my first one and started preparing the next one.

Iâm going to throw a strong recommendation in for the duck tsukemen. Thick, dark brown noodle made from freshly stone ground floor. This is the pinnacle of what a noodle should be. It may lack the dense texture of a bread flour noodle, but it makes up for it in flavor, in mouth feel and - best part - better for you!
They give you first saltwater on the side to dip your noodle in, to appreciate and enjoy the taste of fresh ground wheat. What follows after this magic is the best part, a thick duck soup to dip your noodles in on the side. Iâm a tsukemen nerd and this easily is my #1. Keep in mind - it may be a winter special so check before going all in (they previously had a lighter broth when they opened).
