Mentei Shimada — Restaurant in Tokyo

First impressions: This is ramen to write home about. Beautiful presentation. Light but delicious fish broth. Noodles cooked perfectly to my requested firmness. The egg was boiled to perfection. So why 2 stars? The meat tasted old and rancid. It was cardboard-like and not tender at all. Both suggest one of two things:

1. the meat was cooked several days in advance and refrigerated whilst being exposed to air, thus suffering from warmed-over flavour; or
2. this is old meat, frozen for perhaps a year or more. No matter how long you boil old meat, it will always be dry and never become tender, and I could not enjoy it at all. Whichever the cause, neither is...

★★★★★ つけ麺 久しぶりに食べましたが、とても美味しくなっていました。また食べに行こうと思います。

つるつるしていた丸型形状の割り箸はつかみやすいものに改善され、つけ麺のスープは美味しくなり、麺も美味しいスープが絡むやや細めのものに変更されていました。もちもちとした食感で前回は絡まなかった昆布水がしっかり絡み、途中の味変もかなり楽しめました。

★★★★ 担々麺 最初はそうでもないかと思いましたが、山椒が効いていて食べ進めるほどに美味しかったです。冬季限定なので食べられなくなってしまうのが残念です。 替え玉のネギがやや辛かったように思いますが、100円で角切りチャーシューまでついてくることを考えるととても良かったと思います。

今度は1日20食限定のトリュフまぜそばを食べてみようと思います。 たった7ヶ月でここまで美味しくなるとは想定外でした。かなり試行錯誤されたのではないでしょうか。また次を楽しみにしています。

——————- オープン後すぐ ——————- ★★★ ランチにつけ麺を頼みました。 割り箸が丸型形状で食べづらかったです。

重たい麺を、よく滑る箸で食べなくてはならず、手が痛くなりました。直ちに形状を変更した方が良いと思います。

昆布水の使い方を丁寧に説明いただきましたが、行列ができている状態での説明にしてはかなり長く感じました。テプラか何かで目の付くところに貼り付ける程度で良いと思います。

オープンしたてで仕方ないかもしれませんが、提供時間が遅いように思います。着席から提供まで約40分かかりました。一般的な企業の昼休みは12-13時なので、片道5-10分として食事に取れる時間は40〜50分。3分ほどで大急ぎで食べましたが、女性や食事速度が遅い方はランチの選択肢から外れてしまうと思います。
