🍜 åĄŠį…Žåš˛ã—ãã° / shio niboshi soba đŸ‡¯đŸ‡ĩ 柴崎äē­ / shibasakitei / tsutsujigaoka, tokyo đŸ—“ī¸ 06/26/2024 (@wei.oframen on ig for my ramen adventure 😚) I've been stalling this Shibasakitei visit for a while now and I'm glad that I finally made the trip. Shibasakitei is famous for constantly pumping out new gentei bowls and on my visit, they have a chilled variant of this shio niboshi. I decided that I should go with the regular hot bowl as it was my first time here. I'm not sure yet whether my rating is skewed due to the last 6 months outside of Japan but this bowl was incredibly delicious with just salt and dried sardines. The cook of the noodles was pretty much perfect imo and this simple yet delicate niboshi broth drew me in til the last drop. The noodle fold and this clear golden broth were also too mesmerizing to look at. With the current exchange rate, this bowl was barely $5 for this godsent quality.

A hidden gem in a residential area of Chofu, Shibasakitei is a throwback to the classic Niboshi Ramen. For 950 yen you can enjoy a fabulous bowl of Niboshi Shio Ramen with Won Ton. The soup has a distinct dried fish broth which pairs well with their plump won ton dumplings. While you might expect a few small won ton from other ramen shops, Shibasakitei doesn't skimp out on their portions. Prepare yourself for five to six ridiculously plump won ton dumplings. The soup itself is one you won't forget. With an initial taste of dried fish, you'll leave with a aromatic salty aftertaste. The noodles are quite thin and is a great accent to their original soup. Well worth the trip for their bowl. You'll leave wondering why you haven't gone before.

I've been stalling this Shibasakitei visit for a while now and I'm glad that I finally made the trip. Shibasakitei is famous for constantly pumping out new gentei bowls and on my visit, they have a chilled variant of this shio niboshi. I decided that I should go with the regular hot bowl as it was my first time here. I'm not sure yet whether my rating is skewed due to the last 6 months outside of Japan but this bowl was incredibly delicious with just salt and dried sardines. The cook of the noodles was pretty much perfect imo and this simple yet delicate niboshi broth drew me in til the last drop. The noodle fold and this clear golden broth were also too mesmerizing to look at. With the current exchange rate, this bowl was barely $5 for this...

A hidden gem in a residential area of Chofu, Shibasakitei is a throwback to the classic Niboshi Ramen. For 950 yen you can enjoy a fabulous bowl of Niboshi Shio Ramen with Won Ton. The soup has a distinct dried fish broth which pairs well with their plump won ton dumplings. While you might expect a few small won ton from other ramen shops, Shibasakitei doesn't skimp out on their portions. Prepare yourself for five to six ridiculously plump won ton dumplings.

The soup itself is one you won't forget. With an initial taste of dried fish, you'll leave with a aromatic salty aftertaste. The noodles are quite thin and is a great accent to their original soup.

Well worth the trip for their bowl. You'll leave wondering why you haven't...

This small ramen place should be in the Michelin guide. There are only ten seats available, so be prepared for a waiting line during usual meal hours. We love the sansho (åąąæ¤’ Japanese pepper or Japanese prickly-ash) ramen, and the flavour is simply exquisite. The soup is clear and light, with a huge impact from the freshly ground sansho.
