I've been stalling this Shibasakitei visit for a while now and I'm glad that I finally made the trip. Shibasakitei is famous for constantly pumping out new gentei bowls and on my visit, they have a chilled variant of this shio niboshi. I decided that I should go with the regular hot bowl as it was my first time here. I'm not sure yet whether my rating is skewed due to the last 6 months outside of Japan but this bowl was incredibly delicious with just salt and dried sardines. The cook of the noodles was pretty much perfect imo and this simple yet delicate niboshi broth drew me in til the last drop. Read moreA hidden gem in a residential area of Chofu, Shibasakitei is a throwback to the classic Niboshi Ramen. For 950 yen you can enjoy a fabulous bowl of Niboshi Shio Ramen with Won Ton. The soup has a distinct dried fish broth which pairs well with their plump won ton dumplings. While you might expect a few small won ton from other ramen shops, Shibasakitei doesn't skimp out on their portions. Prepare yourself for five to six ridiculously plump won ton dumplings.
The soup itself is one you won't forget. With an initial taste of dried fish, you'll leave with a aromatic salty aftertaste. The noodles are quite thin and is a great accent to their original soup.
