TLDR: Our food took about 20-30 minutes but was so worth it to speak to the owner and meet other regulars in the restaurant. The burgers were exceptional and despite eating a lot left us feeling refreshed and not gross. I would travel back from Tokyo just to visit again. Get the Shuvidu Burger if you like pulled pork, I think the pulled pork is excellent.

While spending our only night in Tottori we decided to try the local Tottori meat and get burgers. As Americans I’d like to say our bar is set pretty high, and we just so happened to find this restaurant.
The atmosphere is quaint and extremely easy to talk, the owner/cook will move around and cook in front of you while also tending the bar that the counter sits at. Of my year-and-a-half of time spent in Japan, the owner might be the most genuine and kindest person I’ve ever met. He came to the US 3 times, discovering “craft burgers” and learning about farm-to-table dining. Seeing that Tottori did not have anything like that, he dropped everything to create this restaurant himself.
Everything is made from scratch using local ingredients. Naturally this makes things take a bit longer to prepare but the owner prides himself on “slow-food”, the natural antithesis of the fast-food we have so much of.
