Just across from our hotel we had some of the best sushi we’ve eaten in Japan at Rotate Toyama Sushi. They bring fresh fish caught from along Toyama Bay each day and you can try local specialties like White Shrimp, Firefly Squid, and Blackthroat fish. Known as the Jewel of Toyama Bay, white shrimp are a specialty product of Toyama Prefecture. Toyama Bay is the only place in the world to catch white shrimp in large quantities. They are crystal white with soft and sweet shells. The White Shrimp sushi tasted so fresh and a bit sweet too. We both really liked it and the Blackthroat. They have all your favorite sushi and some rolls and a really detailed menu in Japanese, English, and Chinese which makes it super easy to order. Read moreThis is a very popular eatery, with lots of locals and tourists queuing for upwards of 40 minutes to get in. We had tried the evening before but they were too crowded, so we decided to drop in for an early dinner the next day. We waited at 4 pm and got in only at 435 pm.
But the wait was worth it. The food was good, and the ingredients were fresh. We ordered quite a lot of plates, including 8 sea urchin sushi, perch with sea salt, seared fatty salmon, salmon, ika and local prawns.
It is not cheap though. For 44 plates, we paid around 24500 yen.
Staff were very friendly. There is a conveyor belt but the dishes were made by the chefs and directly handed to you.

Special mentions: the crab croquet, crab leg nigiri were very good. Urchin was also very fresh with a hint of sweetness, which is what I look for to determine if it’s indeed freshly made.
Chefs and staff were very accomodating.
