The one star is totally due to my own personal taste - for me, I found it to be WAY TOO SALTY, so salty until I can’t finish it. Perhaps it’s salty to begin with, so they do not offer flavoured egg on their menu and the chashu is also the thick cut ones. Read online that this is the original toyama black ramen and so I decided to give it a try. Although I said it was extremely salty for me, I do not have regrets trying! It’s still an experience. I bet there are some ppl who will like this. But, definitely, I would only recommend it if you can vouch that you can take extremely salty food or you also want to have a go at the original toyama black ramen.

My wife and I visited Nishicho Taiki inside Toyama Station, known as the birthplace of Toyama Black Ramen. The deep, inky broth carried an intense saltiness and rich soy flavor, perfectly matched with chewy noodles, tender chashu, and a bold hit of black pepper. It’s a powerful bowl—best enjoyed with rice to balance the seasoning. The experience felt nostalgic and authentic, capturing the old-school charm of Toyama’s ramen heritage. We both enjoyed it and appreciated how distinctive it was compared to other regional styles.

If you have a love for salty foods, then this might just be the ramen for you. Personally, it was waaaay too salty. There was a small line out the door, about 15 minutes' wait, no problems there. The staff were lovely, welcoming, and helpful. I like that the menu only has one option for the ramen and only 1 topping option. In general, the taste was nice, but definitely way to much salt for my liking. It's worth the experience if it's your first time in Toyama.
