I took a friend visiting from Italy, he said this place offers "very unique Italian cuisine can be made only in Wajima". They use almost all ingredients, vegetables, meats and fishes from the local and cook them in very unique way. The chef has a great sense of mixing the traditional Italian cooking technique and local foods in Wajima also have a long tradition here. 季節の物、地元の物を中心にイタリアンの技法でアレンジ、ワインのセレクトも最高で、輪島に行ったら、絶対また寄りたいお店です。（広島から移住された有名な村井シェフのお店）

建物は旧長屋調のシックな外観、そこにさりげなく「AIUTO」の文字が、中に入ると一転、赤を基調とした明るく華やかな空間が…もうこの時点で美味しい事確定！！

ワクワクして席に座ると、笑顔がても素敵な谷本さんの神接客。

基本はコースメニューだそうですが状況に応じて単品の注文やコースのアレンジも対応頂きました。（夜9時以降はアラカルトでも対応頂けるそうです、地元の若者がこぞって締めのパスタを食べに来るそうなｗ）

目にも鮮やかな、お皿が運ばれてきて、前菜からもうドキドキが止まりません。

器も、輪島の漆器を中心にまた料理が映える演出が素晴らしいです。

味はもちろん、地元食材に関する会話のキャッチボールもめっちゃ楽しい。

料理に合わせるワインもぴったりで至福の時間でした。ぜひまた行きたいです。

人気店で、すべてのテーブルが毎晩予約されているので、早めの予約がお勧め。

あるいは午後9時以降の回転は入店するチャンスがあるみたいです。

Fantástico restaurante de estilo italiano en Wajima. Merece mucho la pena. El dueño al parecer tenía el restaurante en Hiroshima y le funcionaba muy bien pero quedó enamorado por los productos de la zona y se trasladó hasta aquí. Es cocina italiana pero con producto japonés fresco, y con un toque diferente, claro. Pero está todo buenísimo. Tiene 3 menús diferentes en función del número de platos.
