I’m delighted that Michelin has taken the care to spotlight a beloved traditional Malay Javanese treat - 𝗦𝗲𝗿𝗮𝗯𝗮𝗶 - on their 𝟮𝟬𝟮𝟱 𝗕𝗶𝗯 𝗚𝗼𝘂𝗿𝗺𝗮𝗻𝗱 list. Much like the Chinese pancake Ban Chien Kuih (慢煎粿), this humble ‘crumpet’ is crafted in a cast iron griddle from just three simple ingredients: a lightly fermented rice flour batter, rich coconut milk, and golden palm sugar. It’s hearty breakfast fare - flavorful, comforting, and deeply accessible. At just RM1.20 a piece, it stands shoulder to shoulder with its pancake cousin in both price and charm.
