Mesa de Origen — Restaurant in Morelos

We began our evening here with high expectations. We found this restaurant online and it looked beautiful and had an interesting menu so we reserved a table to celebrate our 15th wedding anniversary. When we arrived, only two tables in the entire restaurant were occupied, but for some reason we were seated immediately next to the other party. A short while later we asked if we could possibly move to another table to have a bit more privacy and some breathing room. Although we were literally the only two tables in the restaurant at that point, we were told that changing tables was impossible because they had other reservations. Needless to say, this left us feeling pretty disappointed and uncomfortable. A short while later we requested to be seated outside if they couldn't accommodate us anywhere else in the empty restaurant. They agreed. Although our waiter was friendly and helpful in this situation, our special night had turned into a situation we just wanted to escape. We ate our dinner as quickly as possible then left. As we exited, we couldn't help but notice that only three tables in the supposedly totally reserved indoor dining room...

First, the good: the appetizers and main courses were excellent. The food is highly recommended, although the desserts we had left a lot to be desired. The flaw in this restaurant seems to be the managing of the wait staff. From the moment we sat down, we felt a decidedly cold attitude from our waiter, who basically ignored us after bringing us our food. Not once did he come over to our table to refill our water glasses, even though he saw they were empty. I had to ask another waiter to get him for us a few times during the evening. This made the experience less than ideal, which was a shame, since we were celebrating my partner's birthday.

I have read some reviews about how patrons who aren't staying in the hotel are treated differently in the restaurant than those who are patrons of the hotel. There seem to be numerous complaints about the service and lack of attention/care by the staff. Why is this the case? Regardless of the reason, the service was unacceptable.
