To access the restaurant, we arrived at the main entrance of Parque Fundidora, where golf carts are usually available to provide a convenient ride to the elevator bank leading up to the restaurant. This added a fun and unique start to our visit— don’t forget to tip your driver, they would appreciate it.
Let’s talk about the Food - Their drink menu stands out, particularly the margarita of mixed berries—a refreshing, flavorful concoction that balances sweet and tangy notes flawlessly. For appetizers, we indulged in their panela cheese dish, which is elevated by the addition of Ramos pork rinds. Paired with a zesty green salsa and served with both homemade flour and corn tortillas, it’s a savory treat that reflects the region’s authentic flavors.
For the entrée, we opted for the pear salad with Arrachera beef, which exceeded expectations. The combination of grilled pear, mixed greens, figs, candied pecans, crispy bacon, and Parmesan cheese created a delightful blend of textures and tastes, each bite feeling indulgent yet light.

I had high hopes for El Lingote, but unfortunately, the service was incredibly slow and unorganized, which completely overshadowed the experience.
Despite the restaurant not being too busy, we waited an unreasonably long time just to place our order, and even longer for the food to arrive. When it finally did, some items were missing, and getting the attention of the staff was nearly impossible. The servers seemed disinterested and overwhelmed, which made the whole experience frustrating.
The food itself was decent, but not worth the long wait or the lack of attention from the staff. It’s a shame because the atmosphere is nice, but bad service can ruin even the best meal.
