I wasn't planning on leaving a review due to poor service, but the place is nice so I had to leave a star at the very least.
I know I shouldn't expect much from a third world country, and especially in what they consider "fine dining". I'm all about service before quality. I requested a cappuccino and got a coffee with milk instead; funny I thought at first, until I then later requested a dessert spoon for my dessert (obviously) and to my surprise I got a salad spoon; who hired these waiters?
Not sure how the hiring process goes in a country like mexico, but management should take some tips from Americans and learn to interview these waiters/waitresses. When someone is serving me in a "fine dining cuisine" I expect them to know what it is I am requesting.
Props to the chef by the way, taste could be better but still good; unfortunately the lack of service makes it difficult for this great chef to shine. Therefore, making it more challenging for a repetitive business. I would not be coming here again.
FYI: apparently there is a dress code here; waiters will discriminate you if you're not wearing proper attire (suit+tie) and noticed most families were ignored/kicked out because they had sneakers on and/or regular t-shirt.

Read moreMy problem with haute cuisine is that I’ve always held the belief that food should be memorable for it’s incredible flavour and not for the amount paid for it.
In order for a place to earn my affection there has to be at least one dish that blows my mind and I end up craving for the days/weeks/years to come. Inevitably driving me back. Something that I know I can only experience at that place and will forever be bound to my memories of that particular area.
And while I have to admit that I was really excited about trying Mexican Alta Cocina, due to the potential imaginative reinvention of the ingredients that I already love in my favourite Mexican dishes, I was thoroughly disappointed.
The food is good, don’t get me wrong, but it is no better than a good meal outside of the pretentiousness that comes with paying too much for something.
The entrees: chalupas, huaraches, and assorted Mexican garnachas. They are about as good as anything you’d find in a humble market stall. The flavour of the salsas, etc. Really nice, but severely overpriced.
Then the mushroom soup. Nice but the rosemary branches really hindered the experience. Sure they look great and give the soup an interesting accent but can you please remove the inedibles from something I’m going to be eating with a spoon? And again it was no better than the mushroom soup my mom makes (and sure, she’s an incredible cook but I expected magic from a place that has earned such high ratings amongst the locals)
The main dish, may have been my mistake while ordering. A beautifully served chicken/cheese pasta. It was so average that it went unfinished while I proceeded to eat my friend’s significantly better poblano pepper sauce pasta.
And finally the dessert was a bit of a disaster. An average tasting soft cake (bizcocho tibio) that is no better than any average soft cake. Possibly the jam was the best part of it.
The drinks were nice, particularly the mezcal, but no better than truly good one and, again, I found the much promoted 3V Wine from casa madero to be just OK, maybe a bit sweet, but definitely undeserving of the 4x markup at which it’s served.
Overall, it suffices to say I won’t be coming back. It may be worth for any foreigners traveling the area because it’s a great way to try a variety of cuisines on the same table, but there’s no reason for locals to be going here. When there’s so much ridiculously good food around for a sliver of the price.
On a positive note, the service and atmosphere are really appealing....

We were walking around in Cholula and he saw that place and we decided to walk in for dinner, as soon as we walked in we got terrible looks from the waitres cuz we where not dress in fancy way I guess. I order a glass of wine and my husband a vodka, the waiter told me in a rude way the price of the wine glass ($300 pesos) like making sure I could pay for it. I told him a better but the bottle, my husband chose I bottle, we ask for It, we never got It, they didn't want to serve us, the bottle was sitting at the bar and we could see how between the waiter were saying to hold it. Nobody went close to out table, not even to ask if we were ready to order. We were very upset and we asked for the check for my husbands drink and the manager so we can file a complaint.
