AUMA Restaurant at Hilton Cancun – A Must-Try Dining Experience

I had an excellent dinner at AUMA, the signature grill at Hilton Cancun All-Inclusive. From the ambiance to the food, everything was top-notch. Here’s what we ordered: • Grilled Bread – A nice touch for the table, warm and delicious. • Provoleta Asada – Charred provolone with roasted peppers, chimichurri, and toasted baguette. Make sure to eat it fast—the cheese hardens quickly. • Carpaccio de Res – Thinly sliced beef tenderloin with lemon aioli, capers, pickled shallot, arugula, and shaved bread. Light, flavorful, and well-balanced. • Ensalada Caesar – Romaine, parmesan, roasted garlic dressing, and toasted croutons. Came in a very unusual plate, but the taste was excellent. • Shrimp Cocktail – Fresh, well-seasoned, and a great starter. • New York Strip (300g / 10.6 oz) – Cooked to perfect medium rare. This was my favorite dish of the night—tender, juicy, and full of flavor. • Steak de Coliflor – Cauliflower steak with warm eggplant caponata, charred carrot purée, herbed breadcrumbs, and arugula. A great vegetarian option with bold flavors.

The service was attentive, the atmosphere was upscale yet relaxed, and the food was absolutely delicious. If you’re staying at Hilton Cancun, AUMA is a must-visit.

I can’t ask for a better restaurant! We visited Auma as our last dinner in Mexico, and it was just the perfect experience. The food was amazing, especially the outside skirt. We had the pleasure of dining at Auma, and I must say it was an amazing experience! The steaks were cooked to perfection, and the mixed grill was also outstanding. The chicken and fish dishes were also delicious. The service was very polite, and the atmosphere was romantic yet casual.
