Al Pasha — Restaurant in Île des Terres Basses

Had a mojito and margarita and both were the perfect amounts of alcohol. Not too weak and not too strong. If I want a weak drink, I'd order a soda and a strong drink. I'd order on the rocks or neat. Ordered the escargot for an app and the rack of lamb and pasta bolognese for mains with a side of eggplant parm. Everything was incredible. The lamb was very tender and flavorful. The escargot was the perfect texture. Eggplant parm full of flavor and the pasta was perfectly al dente. The owner, Bassam (Sam), was very friendly and kept checking on us to make sure everything was good and if we needed anything. At the end of our meal, he came over and spoke with us as friends. We spoke for about 30 or 45 minutes about life experiences, family, life on the island, and various travel stories. He introduced us to his wife and we spoke with her for a bit as well. UPDATE: came back a year later bc our friends wanted to go & service was still very slow.... owner greeted us and checked up on us many times prior to ordering food. he was awesome- so friendly & very funny. after ordering food, we waited an hour and a half without any check-ins from our waitress; we wanted refills of our drinks + more water, but never got the chance. food tasted good & drinks were yummy. 1st time: Service was slow, but understandably so, as there was only one server and several tables. She was very sweet and friendly and updated us on our orders and checked on us frequently. Food was amazing and the drinks were fantastic. It was amazing to finally eat someplace with vegan options...

Wonderful fish, lamb Mediterranean specialties, fresh salads and more. We have tasted half of the menu, everything is delicious. We have visited with our friends several times during our stay. Don't forget to order a bottle of wine and chill. If you are vegan, this is the place. Save room for dessert. This is St Maarten's hidden gem. Charming host, excellent wait staff, marvelous chef, delicious food, relaxing ambience, each meal prepared with a personal touch.
