From the moment I stepped into Ever, I knew I was in for something truly extraordinary. This wasn’t just a meal; it was a transcendent experience curated by absolute masters of their craft. Each dish was a flawless symphony of flavors, textures, and creativity—every bite left me speechless.
The Shiitake dish, with its perfect interplay of sweet potato, hazelnut, and miso, set the tone—a warm and umami-packed embrace that awakened my senses. Then came the Mahi Mahi, an absolute revelation. The balance of cucumber, ajà amarillo, avocado, and gastric was nothing short of genius, and the pairing with Dr. Konstantin Frank’s Riesling elevated it to celestial heights.
The Baby Corn was a playful yet refined masterpiece. The chive emulsion, coffee salt, and crème fraîche danced together in harmony, and the Art de Vivre Clairette paired impeccably. Moving on to the Barracuda, I was blown away by the boldness of the coconut, achiote, and tapioca combination—perfectly complemented by the light yet complex Martingale Brouilly Gamay.
Between courses, the Pineapple-Basil Palate Cleanser was a refreshing interlude that was as thoughtful as it was delightful. Then, the crown jewel: the Sous Vide Short Ribs. This dish redefined luxury. The rosemary-infused potato aligot was heavenly, and the nasturtium added a delightful peppery note, all paired with the robust Ridge Pagani Ranch Zinfandel that tied it all together flawlessly.
Finally, the Chocolate course. Wild berries and cocosette created a dessert that was indulgent yet balanced, and the pairing with Quady Electra Moscato was nothing short of genius—a sweet finale to an unforgettable evening.

I can not say enough good things about this place, From the moment we walked in to when we left, the staff cared for us 100%. Everyone there really knew their stuff.
The restaurant was such a cool vibe from the moment you walked in. The music was a vibe. The artwork is just beautiful. I really loved that all the pieces and glass work featured were from local artists and could be purchased. The space is built like you're sitting in a chef's kitchen. It was amazing to see Chef Ever and Chef Chris do their thing. The food was sincerely delicious. I've never had such flavor combinations before, but at the same time It was just the right touch of familiar. I highly recommend you get the wine pairings because they are carefully chosen and totally on point.
Not to mention, it is so cool to be able to speak and interact with the chefs as the evening goes along. They were so friendly and down-to-earth and super easy to talk to. After dinner, Chef Chris was even kind enough to tell us more about the island's culture and recommend a few places we could go to have a better experience on our vacation.
We were the last to leave and the manager walked us out. She even called a taxi for us to make sure we got back to our hotel safely.
