This is the closest to a New York bagel you will find in Oslo, but it is not quite there. I got two everything bagels with plain shmear. The first bagel had a great texture, including a pleasant chewiness. It was clear it had been boiled before baking, giving the crust a nice skin and crunch while keeping the inside soft and chewy.
The second bagel was not nearly as good. It was slightly burnt, making the crust much too tough. Likewise, the texture of the interior was closer to a baguette than a bagel. I'm not sure what happened, but the lack of consistency between the two bagels was noticeable.
Additionally, the everything bagel is not "everything." There was no salt, garlic, or onion flakes. I also think it had too many poppyseeds, so it mostly tasted of poppyseed.
Lastly, the bagels were light in color and not quite as flavorful--I suspect that the dough may not have been made with barley malt (either barley malt powder or barley malt syrup). As someone who both lived in NYC and who has made bagels, barley malt is a key ingredient in giving bagels their distinct rich flavor.
I wish the owners much success, as a bagel place is definitely needed here. But there is room for improvement in consistency, taste, and inclusion of more beyond poppyseed/sesame on...

Everything was delicious!
I absolutely love Bob’s Favorite and Gina Mozza. Additionally, Bob the Bagel has converted my husband into a cream cheese lover. He just stated that he was in heaven when eating the new sesame bagel with jalapeño schmear.
Finally, I didn’t think their bagels could get better but the new recipe is perfection. I didn’t know bagels could be so soft and fluffy on the inside while maintaining a good crunch on the outside. We will definitely be coming back!
On top of it all, the service is amazing. The owner is super friendly and easy to talk to. He is out there grinding every day and it shows. ———————— Finally a good bagel in Oslo! It will always be very hard to please everyone, especially taking into account the long lines that often form outside this cafe. I however am one of the very happy and satisfied customers. For me, I fully understand the hype.
I was lucky to catch a bagel with no more than five minutes waiting time. I went for a classic egg and bacon - the portion was good and the filling lovely. The eggs were creamy and the bacon crispy. Bagel bread chewy as it should be.
I do however second what is said in a lot of the other reviews, this place is indeed pricy. Several of the bagels cost close up to 200NOK.
