(Remaining one star means an infinite potential.) Having heard good rumor about the restaurant, I visited Umami Japanese Restaurant for the first time today (June 28, 2024). The restaurant was bright, clean, and comfortable for me. Personally, I like quiet restaurants, so I thought it would be better if there were fewer customers as there were today. Now, let's talk about the important thing, the food. I could not try many dishes because I visited alone, but today I ordered grilled gyoza, fried horse mackerel, and soy sauce soup ramen noodle. For my preference to taste (due to my age), the yaki-gyoza (dumplings) should be a little less oily. But, taste and texture were very good. If possible, I would like them to try the sui-gyoza (boiled dumplings) as well. Fried horse mackerel, which is a deep-fried fish called "Áji (with accent on "A")" in Japanese or horse mackerel in English, was crispy (saku-saku sound) and meaty-thick and very tasty. The ramen noodle was also very tasty and I thought they made a great effort to achieve satisfying taste. A ramen noodle was originally introduced from China and has undergone many trials and modifications in Japan for long time. Therefore, I felt the value of the ramen they prepared for me as a work of art that has been created so well using limited ingredients in Negros island.
Lastly, the customer service at this restaurant is top-notch. I do not think the customer service with friendriness is always good and thinkble by most of the people. Keeping distance sense betwen staff and visitors in this restaurant were really fine.
