In the hot afternoon, we are desperate for a place to chill with a cup of coffee. Then we came across Ram Coffee House, a little gem in Moalboal which offers nice coffee experience with a cozy environment.
We had an Iced Cafe Latte for 180 pesos. You might think it is a bit expensive, but the presentation is spectacular. A ball of ice floating in the cold milk. As we pour the coffee into the milk, seeing the coffee disperses in the milk, observing how the color changes. Quite a nice experience to do the final step of a latte.
Ok, enough about the appearance, how about the taste and aroma? The coffee aroma is calming, waking me up from the heat as I drink the cold latte. If you ever lost for words on how to describe the taste and aroma, you can refer to the flavour wheel at the wall there.
The staff is friendly. It was empty when we were there, so it is calming to get the whole place to ourselves.

I had waffle and bacon and it was delicious and good enough for me. From my point of view, the staff have plenty of drippers and barista tools so I think they are also able to make a v60. Also the espresso machine looks promising and the coffee out of it was perfect. So if you are looking for a place with specialty coffee and with the AC, I would suggest this place. Also if you are a nomad and you are looking for a place for your remote working, I would choose this place.
My recommendation to the owner is to promote this place more for the digital nomads - the place is quite far from the coast which could be a blocker for many people, but digital nomads may stay longer here and this blocker fades over time. Whilst the other is a stall/pop up at the nearby food court, that doesn't have food. The shop is quite big with good AC. It was my first time trying local Filipino beans, and it was nice with a grapefruit-like acidity. I got a v60/pour over and my partner got a flat white. The flat white was made better at the stall, as the one at the shop tasted a bit "watery". I think the shop made it as a single espresso, whilst the stall made it as a double. Resulting in a more balanced and enjoyable drink. The stall area is pretty much brand new, and was really quiet in the morning. The baristas at both venues were really friendly.
