In my humble highly experienced opinion put this place on your 'MUST TRY LIST'
Given the local ingredients as the main limitation the food is excellent.
The only notch Up improvements that could possibly be made would be using white meat chicken , a softer flour for tortillas or making then daily fresh (mine seemed very slightly stale but basically fine) , and for fun red, blue, yellow or white chips in the nacho dish.
Understood the costs of higher grade food might not make business sense. If that is the case the owner has hit a grand slam as is.
