Not horrible, my girlfriend and I stopped for a quick dinner. Nomally this place is packed, but we wenr during a quiet weeknight. We ordered a pizza and spaghetti carbonara. The pizza was flavorful but soggy, the crust lacked body and strength, but did have a nice chew which I prefer over biting into a cracker. The carbonara was not made with the generally acceptable standard ingredient ratios. A portion should be made with at least 28 grams of guanciale, 35 grams of a Pecorino/Parmesan blend, and 1 egg yoke and a whole egg per portion of 100 grams of spaghetti with enough starchy pasta water to emulsify the dish and plenty of coarse black pepper. This ratio gives the dish a rich glossy and creamy outcome. Carbonara should be creamy, but shouldn't have any cream. This dish certainly didn't have any cream, but it also was not creamy. The carbonara here was tasty, the pasta was perfectly cooked, but it was dry and lacked the correct proportion of all the ingredients to supply a creamy texture. Frankly I make a better carbonara at home. A restaurant should strive to do their best always because they never know when an educated diner might show up. I understand that cost cutting measures must be taken when considering the local economy, but this restaurant is located in a somewhat upscale neighborhood. I personally never mind spending more when I know I will get a quality dish. I'm simply not sure it's would be worth another visit.
