I recently visited Rosa Blanca and unfortunately, it was a deeply disappointing experience. I ordered the carbonara, expecting a classic and delicious dish, but what I received was anything but that. First, the pasta itself was inconsistent-some of it was overcooked and mushy, while other parts were undercooked and hard. Then came the sauce, which was baffling. They added mushrooms and some kind of ham to the dish, completely missing the mark on what carbonara is supposed to be. Where was the bacon? Where was the Parmesan cheese? The flavors were bland and unbalanced, making the entire dish unenjoyable almost inedible.
