I don't know how to reply on you question, but I am adding the answer here.
I don't think I would be the right person to set your business strategy or the price policy. I am here to warn other tourists what to expect when they enter your restaurant. But if it helps you, I can inform that for the same price 12 EUR (as your Greek salad) you get very tasty grilled salmon with grilled vegetables and Canarian potatoes in the reastoarant called Addio Mare which is one floor up in the same building. BTW the same size Greek salad costs there just 8 EUR. 12 EUR is a way too expensive. I am not even used to pay this much in Sweden or Germany for cut vagetables with two slices of cheese. I would also recommend you to mentioned wine prices by glass in your menu, otherwise people can be shocked to pay 6 eur for a glass of house wine. Again for your information house wine costs between 2.75 and 3.7 depended on the place in the very good restaurants, but not 6 EUR.

The waiter, who I believe to be the owner was Greek himself which added to the authenticity, we spoke some Greek words (as little as I know). Whilst waiting for drinks to arrive the owner gave us some recommendations of places to visit in Greece and chatted like we were friends. He recommended the special of the day which sounded so good we were swayed. But first starters. Dolma rice and herbs wrapped in vine leaves, tatziki and flat bread, and a mixed salad. All yum. The main attraction, was a man sized portion of rosemary lamb on the bone, with fresh veg and potatoes. The lamb literally fell off the bone was tasty and tender and the potatoes and veg were pretty standard so no complaints. I did overhear another diner say the potatoes were a bit sour but that's because Greeks cook with a lot of lemon, which is what I could taste.
