You can't really judge a place from a few visits during high summer. Everywhere is busy, staff are hard worked, service will be slower and the preparation of the food will be rushed.
Living here all year I have sometimes wondered why this place is not busier in the low season. There have been occasions when we have been the only couple there for most of the evening.
The food is good enough and the place is pleasant after the last renovation.
The problem is that typical to a lot of places they simply don't realise that there is a difference between serving customers and customer service.
Serving customers is not a big deal. Well trained staff can easily take care of that, especially when things are quiet.
Customer service means not telling regular customers when they arrive that they can have just one drink before they shut.
It means not turning away customers who have the audacity to turn up after half past nine on a particular evening.
Who goes out in the evening only to have to go home or find another venue at 10pm?
It means not making the few customers you may have feel unwelcome by clearing tables, cleaning floors, closing shutters, dimming lights and turning off music and the TV's because you want to go home earlier.
Treating your customers as commodities is a short term strategy, even if you do smile at them while disrespecting them.
Your customers have long memories and many, many other bars and restaurants to choose from.
Yes, you will be busy in the summer. Just like all other places.

I had exactly 2 mussels and 2 langoustines in my paelle (so much for the fish), no vegetables and rice soaked in oil. My wife had a number of chicken pieces with more bone than chicken, also no vegetables. Not what a paella should be if you ask me. We also gave this feedback in the restaurant. After clearing the table we thought to have a final drink, but noboy came to our table to ask for dessert, coffee or anything. I even had to insist on getting the bill. After ordering we found the floor was extremely dirty with cigarette butts & litter and underneath the tables had not been cleaned.
