A Sizzling Birthday Feast at Bad Wolf BBQ in Visby!
I recently celebrated my birthday in Visby, Sweden, while visiting my brother-in-law and sister, and they treated me to a Birthday dinner at Bad Wolf BBQ in the heart of Old Town. As someone who’s lived in New Orleans, Alabama, and Texas—places renowned for their culinary prowess, especially BBQ—I consider myself a bit of a food connoisseur. Let me tell you, Bad Wolf BBQ didn’t just meet my high expectations; it blew them out of the water with a true American BBQ experience that felt like a taste of home.
I ordered the brisket, and it was an absolute masterpiece. The slices were melt-in-your-mouth tender, bursting with rich, smoky flavor, and boasted a pronounced smoke ring—a testament to the pit master’s exceptional skill. Each bite was a smoky, savory delight that reminded me of the best BBQ joints in the American South. My local but family dinner companions, originally from Mississippi, opted for the BBQ pork quesadillas, which they elevated with a generous drizzle of spicy BBQ sauce from the self-serve dispenser. They couldn’t stop raving about how perfectly the flavors came together—crisp, cheesy, and packed with bold, tangy goodness.
What truly set Bad Wolf apart was the atmosphere and service. Despite the restaurant being packed due to Visby’s lively Medieval Festival, the staff remained calm, professional, and attentive. The owner was a standout, stationed at the ordering kiosk, ensuring every customer left delighted. His hands-on approach, assisting the wait staff and directing food to tables, showed a genuine passion for hospitality. It was clear that every detail was thoughtfully managed, creating a warm and welcoming vibe.
The beverage selection was another highlight. Bad Wolf offers an impressive array of American beers—rare for Sweden and a treat for any beer enthusiast. I was thrilled to see Dale’s Pale Ale, an award-winning gem from Colorado, and Lone Star, a solid lager from Houston, Texas. These weren’t your typical mass-produced “water beers”; they were authentic, flavorful choices that paired perfectly with the meal. The extensive beer menu added a layer of authenticity to the American BBQ experience.

In more detail though, I came in on the 24th of November (2018) with my parents and a friend of mine. Being American by decent, especially from the west, I immediately appreciated the laidback BBQ style that the establishment welcomed us with. Following our arrival we chatted with the host and his wife, presumably head-chef on and off throughout the evening.
Not only did we chatterboxes feel welcome and warmed by the engagement, the menu was a decent spread with a fun touch to the descriptions.
We ordered the Fried Pickles, Tater Tots and Nachos as appetizers and I was personally blown away by the batter for the tater tots as well as the tortillas used for the nachos. To this I personally ordered the Hard Lemonade which was also very pleasant I must say.
When it came to entrés we ordered 2 racks of ribs and 2 burritos and personally I really enjoyed the burrito, again the tortilla was amazing. I did taste the ribs and they too were great, so very tender and the bones were so easy to peel off.
We even finished with the pumpkin pie, which is something I personally haven't eaten in very many years and it was such a good finish to the evening on top of the chatter inbetween orders.
I will personally recommend this BBQ joint to anyone that appreciates BBQ as well as authentic tortillas which is truly not easy to come across out of my experience.
All in all this evening was without a doubt enjoyable, we stayed from 6pm and didn't leave until around half passed nine, we all felt welcome and did not at all feel any rush to leave either.
5 out of 5 stars is something I do not give easily, particularly in regards to restaurants but Bad Wolf really did deserve it from the aspects of service, chatter, quality of the food, process in making the food and attitude of everything inbetween.

Jag var nöjd med, quesadillas, ribsen och brisket men den friterade kycklingen och pommesen smakade gammal frityrolja/man kände smaken av annat som blivit friterat i samma olja och var verkligen inte gott.
God hemgjord BBQ sås som man fick ta så mycket man ville av och nice att man får våtservetter, men överlag måste jag ändå säga att jag är besviken givet det goda omdömet de har.

First of all, reading this reply it does not at all seem to me that you appreciate the feedback as I feel it's quite defensive. Secondly, it's correct that at the end of our meal you came to collect our plates and asked if everything tasted well at which point we explained our disappointment with some* of the food. You were courteous when we spoke (compared to tone of your reply here) and acknowledged the fact that you had fried corn tortillas chips in the same oil as the chicken/fries which could've explained the unexpected taste.
In my experience it's very common for restaurant staff to ask their customers how everything tastes usually towards the earlier part/middle of the meal. If you wouldn't have asked us at all we would've never said anything which I believe is very common.
To say that we ate nearly everything is in my opinion not accurate we ate what was good and left some of what didn't taste well. Nevertheless, I fail to see the relevance of that as we did not ask for any food to be replaced or for a refund nor did you offer once you were informed of our thoughts. (It would've been unreasonable to eat everything AND ask for food replacement or refund). I think it's very common when you've paid for your food to at least eat so that you're not hungry anymore which is what we did.
To call this review an over inflated entitlement to slam a restaurant feels very strange to me. We are entitled to share our experience and we shared BOTH the good...
