Italian restaurants are often ran either by non-Italians who think they understand Italian food (they don't), or by Italians who cater to the taste of those who say they like Italian food and pineapple on pizza in the same breath. After 10 years in Southern Scandinavia, imagine my surprise at finding a bona fide carbonara in Kristianstad, of all places. Perfectly cooked pasta, crispy guanciale, and a creamy coating of pecorino romano and egg yolk. All accompanied by excellent wine and on point service. I also tasted the seafood pasta my fiancee took, and it was just as delicious.
