Three visits, impressed every time and will gladly return again and again! Quiet cocktail bar featuring an impressive array of foreign liquors as well as local ingredients. Over 150 craft gins available. Cash only. Good English. No music blaring at you. Ten or so seats at the bar as well as smaller alcoves with seating for a group of four.
This is a place for conversation and contemplation over a delicious beverage. Bartenders care about their craft and are happy to not only make you one of the ten or so cocktails on their menu (names listed but not ingredients), but will sit and listen to your likes, dislikes, preferences, and hope to make you a cocktail you'll truly enjoy.
I asked for a La Paloma and there was no hesitation at all. My buddy asked for a Wabi Sabi, assuming perhaps it was a spicy drink with a play on wasabi. They informed him differently and suggested another option, the Chasei. Described as a variation on a Long Island Iced tea made with the infusion of five different Taiwanese teas. The La Paloma came out perfectly balanced even though they had to make their own grapefruit soda from scratch. My buddy was extremely pleased with his Chasei. Again, the presentation reflected a careful attention to detail.
On my next visit they served up a delicately balanced Paper Plane, substituting a Taiwanese liquor for the whiskey/bourbon. Also a delightfully light margarita variant and a nicely nuanced variation on a New York Sour. And when I asked for a custom creation that captures the essence of Chiayi in a cocktail, I was handed something replete with various teas and simple syrups that was aromatic and sweet, flowery and light.
