Good coffee that worth mentioning. Unpleasant service were encountered, and most seats were taken by cafe hopers with MacBooks staying all day long. No “minimum spending required” & no “no outside food allowed” signage were displayed any where in the cafe/menu.
We stepped in and get a small table that barely fits three, as all others were occupied, but yet it is a very nice environment, so we decided to stay. Went to order and was told there’s a minimum spending, and it’s fine and it’s our choice to stay. However, since there’s no “No outside food”signage is displayed, and our intention is to consume our own bite size desserts that bought from nearby shop. Seating IS limited, and employees will ask you to move to the front bar section if you’re solo and there are larger parties that arrive later — something I get, but still found annoying as I wasn’t taking up a larger table (just seating for ✌🏼) and this defeats the purpose of getting there early. 在烘焙上我們的目標很簡單只有兩個,清楚的表現生豆本身的風味個性,以及呈現容易辨識的甜感。光是要達到這兩個目標,就讓我們費盡了兩年的探索與學習。
我發現往往在跟顧客溝通一隻豆子的風味,除了生豆本身(產區、樹種、處理法之外),最常談到的是烘焙程度。大家一般習慣用淺焙、中焙、深焙的方式來描述自己的烘焙,有些人說的是烘焙結束時的溫度,有些人說的是豆子顏色艾格狀的數值,有些人說的是烘焙發展時間的長短。我們發現光是用淺、中、深,其實沒辦法清楚的傳達『烘焙程度』這件事情。 所以在綠洲,我們將烘焙程度分成三種: 烘焙程度 1: 甜度像水果 烘焙程度 2: 甜度像糖果 烘焙程度 3: 甜度像巧克力
