I was looking for a restaurant with old noodles, and took the 306 bus, but it turned around and went back on the way, so I had no choice but to walk from the middle, it took less than 10 minutes, it is open all day during the day, and closes at 7:15pm. I ordered a large portion of dried noodles for 75 yuan, pork bone soup and boiled vegetables. I put some vegetables on the noodles and ate it. The noodles were just as good, and the bone soup had a good flavor. Inside the restaurant, to the right are the owner and staff, who take orders and prepare them. There are tables in the middle, which can seat 14 people, and counters on both sides, which can seat 16 people. The service is good. The owner asked me where I was from and guessed that I was Japanese. I guess they have a lot of Japanese customers. I would like to come back, and this is a restaurant I...

Don’t be fooled or intimidated by this shop’s rough aesthetics, this is the real deal. The staff really know how to work efficiently whilst still being incredibly accommodating and providing amazing service.

As I set eating my noodles, I realized that the merely 80+ year old man sitting next to me hand pulling noodles was the owner, who was greeting every customer and chatting away happily. He engaged me in conversation and was very grateful for mine and everybody else’s custom. To be so sprightly and vibrant at that age... I’ll have what he’s having.

The menu is small, but you don’t need to think much. Just get the dry noodles. Having lived in Asia for 8 years now, these are some of the best dry noodles I’ve ever had. 60 NTD for a large bowl is really not enough.

五:這家老字號應該是相當有名氣的老店!在美食的社團中可能貼文還會被說個幾句的程度?覺得應該是大家都知道的點,毋庸再多介紹了。

知道這家也好些年,不過,在萬華混跡廿年都不知道這家,反倒是搬到文山開始靠著社群媒體的推波助瀾之下,才發現這家的。對於我來說,因為距離遠,所以久久會來吃個一回,單純是種溫故知新的感受。這幾秊下來,平均一秊也會來個三趟吧?

這家的乾麵味道真的很傳統,炸醬、芝麻醬是混著豬油,還有用鹽水(這個真的已經很少見了!我也不知道用鹽與鹽水有何區別?但是老味道的麵店,確實都用鹽水。在羅東有家喥咕麵,過去也是一瓷盆的鹽水,盆沿甚至因為經年累月的用大鐵杓敲放,甚至是少了一大圓形缺角!那模樣甚是奇妙。)這股澆頭的味道就是有種奇妙的味覺傳遞,有時會懷疑是真的喜歡這股帶來的味覺,還是真的是在吃過去與懷旧的口味?

此外,我也喜歡這家店的整潔程度,雖然開了幾十秊,但裡裡外外都維持得乾淨整齊。而不像很多賣吃的店面,沒個幾年搞得像是糟了水災似的混亂。總是見到客群都是中年人以上為主,那種低於卅的著實相對少些。當然也會見到看著網文慕名而去的,這個羣體也是一望可知的模樣,極好辨認。

亖:台北的麵店非常多。麵店對我而言,比較像是在地化吃一頓的地方;不過,你也很難要求居家附近一定能找到讓你滿意,甚至可以很常去吃的麵店。因此,在吃麵這條路上,不得不當個貝都因人。

已經忘記當初怎麼知道這家麵店的了?可打從知道這家之後,每隔一陣子就會來報到。並非這家麵店有甚麼神奇之處,很可能就是單純喜歡這種懷舊的口味吧?這碗綜合了麻將與炸醬味道的麵有股獨門的香味,說有多強烈也不至於,但吃一口後就會發現挺不一樣的。

它應該有著相當的知名度,周末時你總可以見到是觀光客般的人潮絡繹不絕地在排隊。其實不算太小的店,總是有種擠得水洩不通的感覺。那生意算是好到人手永遠都嫌不夠,但是店家的態度也沒因為生意特好,而有種不知名的慢客感。總是見到老闆以相當有力氣的聲量在招呼著與安排座位,煮麵的員工可能會因為天熱顯得比較不耐煩──我想一門工作做久了,遇到生手客人往往都會有種不耐,臉上透露出「你是笨蛋嗎?」的那種嫌惡感。

我單純就是回頭吃吃記憶的味道而已,無它。每回也總能見到他們的老客,那種早已遷居它地,可久久回來一次吃碗麵,與老闆或老闆娘話當年家常的熟稔。

三:這間麵店是我見過最有活力的「老」麵店,老不單是口味老,也在於整個氛圍還維持在某種時空膠囊內的感覺;當然現在店內的模樣絕非是當年的狀況,估計應該也是這十來年內翻過一回的?雖說是第二代人接手,他們年紀也不算輕,可是對工作的熱誠和態度讓我頗為訝異。因為許多知名、生意火爆的老店,在第二代人經營後,先不說味道能否維繫,那態度就令人難以恭維,吃個東西像是遇到債主討債般?可他們卻還維持著相當的精神昂然的氣息,竟然也會用臉書通知營業時間的變動等等──老化真不單是年紀,心態更是關鍵。

那日吃麵時(店址真的離我太遠,確實是久久專程去一趟)見到應該是老老闆,坐在角落最不顯眼的位子上,一個人重複同樣的動作,把一份份麵給包好整理起來,給我種職人數十年如一日之感(不像某些假掰台灣日式拉麵,手藝是不是職人不敢說,但邯鄲學步般吹捧自己為職人倒是很徹底。)好奇心驅使下,拿起手機紀錄這一幕。

二:雖然居所在台北市的範疇來說,離這家麵店也是個天南地北的概念,不過打從第一次來吃之後,總也是會專程跑來這一帶覓食時,來這吃碗麵的。

不過,因為它這是乾麵,所以從來沒想過要打包外帶,頂多就是包個兩碗肉骨湯而已。

那日可怕的偷窺演算法,Google居然跳出老麵店提供外帶時,生麵與醬料分開包裝的文章給我。必須說這系統著實很可怕,監看我們的到了這樣的程度~哈哈哈。

得知此消息後,隨即在周末上午衝去買一份回來。

一問才知,原來這方法早就有了。老闆娘表示,有些老客人早就搬離左近一帶,甚至大老遠從桃園來吃的都有。為了一碗便宜不過的麵,這樣奔波著實很折騰人。所以會針對這樣的老客,提供醬汁另外打包的方式。如此一來,大致上就能複製店內乾麵的口味。

而且買十包送一包,還等於打九折的概念。既然都跑這麼遠了,當然是買個十包屯在家裡。店家表示,放在冷藏可以擺一週,冷凍則是一個月。給的韭菜分量之多,讓我嚇到。他們細心地提醒,洗過的韭菜無法久放,要趕緊先吃完。但老實說,我哪有機會擺冷凍呢?放進腸胃是最好的儲藏室!

回來依法炮製一番,覺得的確可以還原個九成的滋味。懶得出門或深夜想來口簡單的美味,那我一碗的確就夠了,頂多再順便煮個蛋包。欠缺的大概就是那份店內人聲鼎沸,老先生靜靜地...

五:這家老字號應該是相當有名氣的老店!在美食的社團中可能貼文還會被說個幾句的程度?覺得應該是大家都知道的點,毋庸再多介紹了。 知道這家也好些年,不過,在萬華混跡廿年都不知道這家,反倒是搬到文山開始靠著社群媒體的推波助瀾之下,才發現這家的。對於我來說,因為距離遠,所以久久會來吃個一回,單純是種溫故知新的感受。這幾秊下來,平均一秊也會來個三趟吧? 這家的乾麵味道真的很傳統,炸醬、芝麻醬是混著豬油,還有用鹽水(這個真的已經很少見了!我也不知道用鹽與鹽水有何區別?但是老味道的麵店,確實都用鹽水。在羅東有家喥咕麵,過去也是一瓷盆的鹽水,盆沿甚至因為經年累月的用大鐵杓敲放,甚至是少了一大圓形缺角!那模樣甚是奇妙。)這股澆頭的味道就是有種奇妙的味覺傳遞,有時會懷疑是真的喜歡這股帶來的味覺,還是真的是在吃過去與懷旧的口味? 此外,我也喜歡這家店的整潔程度,雖然開了幾十秊,但裡裡外外都維持得乾淨整齊。而不像很多賣吃的店面,沒個幾年搞得像是糟了水災似的混亂。總是見到客群都是中年人以上為主,那種低於卅的著實相對少些。當然也會見到看著網文慕名而去的,這個羣體也是一望可知的模樣,極好辨認。 亖:台北的麵店非常多。麵店對我而言,比較像是在地化吃一頓的地方;不過,你也很難要求居家附近一定能找到讓你滿意,甚至可以很常去吃的麵店。因此,在吃麵這條路上,不得不當個貝都因人。 已經忘記當初怎麼知道這家麵店的了?可打從知道這家之後,每隔一陣子就會來報到。並非這家麵店有甚麼神奇之處,很可能就是單純喜歡這種懷舊的口味吧?這碗綜合了麻將與炸醬味道的麵有股獨門的香味,說有多強烈也不至於,但吃一口後就會發現挺不一樣的。 它應該有著相當的知名度,周末時你總可以見到是觀光客般的人潮絡繹不絕地在排隊。其實不算太小的店,總是有種擠得水洩不通的感覺。那生意算是好到人手永遠都嫌不夠,但是店家的態度也沒因為生意特好,而有種不知名的慢客感。總是見到老闆以相當有力氣的聲量在招呼著與安排座位,煮麵的員工可能會因為天熱顯得比較不耐煩──我想一門工作做久了,遇到生手客人往往都會有種不耐,臉上透露出「你是笨蛋嗎?」的那種嫌惡感。 我單純就是回頭吃吃記憶的味道而已,無它。每回也總能見到他們的老客,那種早已遷居它地,可久久回來一次吃碗麵,與老闆或老闆娘話當年家常的熟稔。 三:這間麵店是我見過最有活力的「老」麵店,老不單是口味老,也在於整個氛圍還維持在某種時空膠囊內的感覺;當然現在店內的模樣絕非是當年的狀況,估計應該也是這十來年內翻過一回的?雖說是第二代人接手,他們年紀也不算輕,可是對工作的熱誠和態度讓我頗為訝異。因為許多知名、生意火爆的老店,在第二代人經營後,先不說味道能否維繫,那態度就令人難以恭維,吃個東西像是遇到債主討債般?可他們卻還維持著相當的精神昂然的氣息,竟然也會用臉書通知營業時間的變動等等──老化真不單是年紀,心態更是關鍵。 那日吃麵時(店址真的離我太遠,確實是久久專程去一趟)見到應該是老老闆,坐在角落最不顯眼的位子上,一個人重複同樣的動作,把一份份麵給包好整理起來,給我種職人數十年如一日之感(不像某些假掰台灣日式拉麵,手藝是不是職人不敢說,但邯鄲學步般吹捧自己為職人倒是很徹底。)好奇心驅使下,拿起手機紀錄這一幕。 二:雖然居所在台北市的範疇來說,離這家麵店也是個天南地北的概念,不過打從第一次來吃之後,總也是會專程跑來這一帶覓食時,來這吃碗麵的。 不過,因為它這是乾麵,所以從來沒想過要打包外帶,頂多就是包個兩碗肉骨湯而已。 那日可怕的偷窺演算法,Google居然跳出老麵店提供外帶時,生麵與醬料分開包裝的文章給我。必須說這系統著實很可怕,監看我們的到了這樣的程度~哈哈哈。 得知此消息後,隨即在周末上午衝去買一份回來。 一問才知,原來這方法早就有了。老闆娘表示,有些老客人早就搬離左近一帶,甚至大老遠從桃園來吃的都有。為了一碗便宜不過的麵,這樣奔波著實很折騰人。所以會針對這樣的老客,提供醬汁另外打包的方式。如此一來,大致上就能複製店內乾麵的口味。 而且買十包送一包,還等於打九折的概念。既然都跑這麼遠了,當然是買個十包屯在家裡。店家表示,放在冷藏可以擺一週,冷凍則是一個月。給的韭菜分量之多,讓我嚇到。他們細心地提醒,洗過的韭菜無法久放,要趕緊先吃完。但老實說,我哪有機會擺冷凍呢?放進腸胃是最好的儲藏室! 回來依法炮製一番,覺得的確可以還原個九成的滋味。懶得出門或深夜想來口簡單的美味,那我一碗的確就夠了,頂多再順便煮個蛋包。欠缺的大概就是那份店內人聲鼎沸,老先生靜靜地在那摺麵身影的老風味吧?
