二:其實,都是為了 Tabasco 而來…… 平日不太會去吃這類的夜市等級的平價牛排,來了多半也是吃雞腿排為主,因為那個價格比較合理。不過,真的會讓我再去的原因都不是因為肉,而是要有酥皮濃湯這東西!
前同事家裡開過麵包工廠,跟我說單賣的這類酥皮其實是品質很糟糕的。告訴她,我知道,看過報導,如果它很好或很健康,又怎麼可能出現在這種地方呢?哈哈哈。要吃得放心、安心,或是到健康等級,那多半得自己買、自己煮,而且還要很在意購賣的渠道;再不然就要砸多點錢,去相信文青體的有機圈圈叉叉了。朋友在中國工作許久,目前回台定居,有次跟他聊到台北竟然有天津煎餅果子。他循線過去,吃完後告訴我,不地道。我沒去天津吃過,但我可以理解這種食物橘越淮為枳的通病。沒想到他竟然說,沒有地溝油,不香。我倆都大笑了!當然,我們是開玩笑的──不過,以我這樣出門在外湖吃海喝的習慣,在中國即便是北京街頭上的路邊攤,在沒多帶腸胃藥下,也會出現那種讓我望之卻步的食物。
但是,我就是要吃酥皮濃湯,主因是可以撒了大量的 Tabasco。因為這東西大概是成本問題,有不少賣牛排或義大利麵的店,其實不會提供的。這家也不例外,上次來就沒發現。因此我這回自己帶上一罐這個「法器。」來了就直接確認,酥皮濃湯是否可以加點?那就直接來個兩碗!其實,對我來說,來個三碗也不成問題。上來之後,立刻把酥皮整片敲到碗內,然後撒入大量的 Tabasco,直到湯呈現紅色的絲狀為止。這時再把酥皮搗爛,充分跟湯均勻攪和。每一口湯與酥皮都能呈現濃厚的 Tabasco 醬味──這是我試過最佳 Tabasco...
