Went there for a friend’s birthday last month and I could firmly say it was a really outstanding experience, and a rare find in Taichung. The sisters owned restaurant has an intimate feel (we were the only booking that night). Food was great (didn’t know the chef had spent time at the famous NOMA wowow). The salad and the pork dish were just so juicy and tender, it’s so good you’d mistaken it as beef. We didn’t order any fancy wines just a cava but it was still good to have it paired with the food. Will definitely come back to try some of the wines selected by the sommelier. Special thanks to the FOH service coz its easy to be feeling intrusive when there’s only one table dining but we didn’t feel that at all, and I never had to worry about not having any wines in my glass. Top notch service!! Can’t wait to come visit again when they change menus. Bless! Bless! Bless!

春季菜單

-干貝/玉米筍/西米露/龍蒿- 用煮透的西米露並且炸過,使西米露成為開胃品的基底,帶有脆度和淡淡的澱粉香氣,搭配干貝丁及玉米筍混合醬汁,輕爽的口感在嘴巴中綻放出來,上面的三片龍蒿帶點特殊香草味,使整體上有三種不同的口感和三種不同的香氣。最後嘴巴留下的是淡淡的龍蒿香和淡雅的海味。

-香草籽餐包/油封蕃茄佛卡夏麵包- 熱騰出爐的餐包,皮薄酥脆包裹著裡頭鬆軟的麵包體,搭配奶油,增加油脂感,讓香草籽的香氣更襯托出來於麵包體之上,油封的番茄濃縮了番茄的鮮度,佛卡夏較緊致,外皮的油脂感也更豐富,番茄酸搭配扎實的口感及奶油,份量剛剛好,這份麵包組合會讓你想要續盤,但是建議留點胃給後面的佳餚。

-溫生蠔/馬鞭草/手指檸檬/黃瓜- 溫生蠔的湯底搭配手指檸檬的細膩果肉,黃瓜片的脆口,馬鞭草油和馬鞭草,一樣俱有三種以上的口感體驗,牙齒可以明顯地感受到不同質地的軟硬,非常有趣,最後搭配生蠔一飲而盡,我的腦袋開始出現畫面,像是出現在一個海邊的花園裡看著海浪一波又起。

-白蘆筍/牛肝菌澄清雞湯/山茶茸- 白蘆筍的清香脆口,熟度剛剛好,搭配牛肝菌的清雞湯和小菠菜,更可以吃到大地土壤的感受,喝完後嘴巴存留一絲淡雅的牛肝菌香氣一直到下一道菜,以上的蘆筍、雞、牛肝菌、山茶茸、菠菜、橄欖油,就像是一幅山中野壤的景色,可以想像得到這幾樣食材原本就是生活在一起的樣貌,最後在嘴裡頭玩耍。

-青甘/娃娃菜/咖喱葉/藜麥- 利用炸過的藜麥帶有魚皮的酥脆香氣,搭配炙燒的青甘,還有鮮甜的湯底和軟硬適中的娃娃菜,青甘的油脂感很夠,外表雖然看似熟透,但是吃下去有生魚片的軟嫩口感,在一道菜當中吃到魚的三種樣貌,生魚片、炙燒、油炸,感受驚艷。這道菜非常喜歡。

-黑豬頰肉/綠蘆筍/味噌/馬鈴薯- 馬鈴薯泥奶油具有慕斯的口感,吃起來像是蛋糕體的綿密鬆軟,中間層有綠蘆筍的切丁,軟嫩的黑豬頰肉在最下面,最後的黑豬頰肉比較重口和油脂感豐富,也襯托出上面馬鈴薯的輕盈爽口。上面的細碎蔥也有增加一絲淡雅的香氣,我會將這道比喻為鹹蛋糕。

-澳洲和牛板腱/甜豆- 以和牛的板腱來當作牛排,剛剛好,帶有和牛的油脂包覆感也帶有肉質的口感,牛肉的香氣、油脂、口感,非常平衡,選擇五分熟的熟度,整體軟硬適中富含肉汁,搭配甜豆山葵醬,吃得到山葵的香氣卻不會嗆鼻,並且甜豆芽有川燙和天婦羅的口感,整道菜外觀西式,質地上又帶些日式風味。

-透抽/白花菜/紅洋蔥- 切的細絲條狀的透抽,搭配底下片狀切丁脆口白花椰菜和咖喱醬汁,紅洋蔥和一些細微的紫高麗菜香氣鋪在上,這道菜不那麼有強烈豐富的香氣,原本以為是主角的透抽,反而變成襯托出其他味道的背景,這道菜就像是已經準備落幕的尾聲,悠悠的慢慢的。

-優格/藍莓/羅勒- 把優格製作成碎冰鬆軟的形式,入口即化,搭配熟悉的新鮮藍莓,藍莓醬和蜂蜜,吃起來輕盈沒有負擔,味蕾和感受上也慢慢輕盈,搭配了羅勒和羅勒油,帶點植物的清香,使這道甜品有更多不只是甜味或是果香的層次。

-嗎哪- 芫荽籽的氣味非常特殊,有點細微的香氣,搭配主廚想像的嗎哪樣式(乳酪)整體上入口即化,嘴巴裡面的香氣卻持續很久。像是神的恩典一樣。這道結束後非常滿足也飽足。

-瑪德蓮大麥腰果&黑芝麻+大麥黑豆茶- 大麥黑豆茶,富有大麥和黑豆的香氣,非常適合無法飲酒和咖啡的人飲用,口感厚實溫順,喝起來舒服療癒。搭配烤好的瑪德蓮,表皮酥脆內質鬆軟,芝麻口味的會讓你想要不斷地咀嚼讓香氣釋放出來。腰果口味有豐富的焦糖香氣撲鼻而來。

TROIS三一是一間溫馨小巧的法餐,如果想要有到別人家裡作客並且被豐盛招待的感受,你一定不能錯過~店內隨性但是不隨便,飲食的時候不會有繁瑣的刀叉交換或是餐桌禮儀,整體吃起來很有放鬆安心的感受,不用帶太多對於無菜單的假設和想像,更感覺像是吃私廚的體驗,單純來吃就對了!男生吃起來大概八分飽,剛剛好,非常期待六月的新菜~
