Cut the pumpkin or squash into large pieces and boil. You could do that in a sauce pan with water to cover, or even better steam boil it.
When soft enough drain, place in a bowl, and puree with a fork.
VARIANT: Some people, instead of boiling the pumpkin, prefer to grate it and saute it with some butter or vegetable oil. Others prefer to grate it and put it in raw. Downsides are that in the first case it ends up quite greasy, and in the second quite crunchy.
Add the sugar, walnuts, and cinnamon; mix in with the pumpkin.
If you decide to use the butter, melt it.
Take two sheets of phyllo pastry and drizzle some melted butter on the top one. You could also use a single sheet, butter both sheets, or do as I do and skip the butter altogether.
Spoon some of the pumpkin mixture over the pastry and roll loosely. Repeat with the rest of the pastry.
Take a non-stick baking sheet or tin (or else oil it). If it is rectangular place the rolls parallel to each other. If it is round, start lining the rim with the rolls, slowly spiraling them towards the centre (you can see what I mean in one of the photos I've submitted).
VARIANT: You could decide to do one whole pie instead of individual rolls. For that choose a baking tin slightly smaller than the size of the phyllo sheets (it could be round). Layer the sheets one by one slightly folding them to fit into the tin and to allow air between them. If you are using butter, drizzle some over each sheet you lay. When you have laid two sheets, spoon some pumpkin mixture on top.
Continue layering the pastry and the pumpkin mix and finish off with a single sheet of dough.
Place the baking tin in the oven.
Bake at medium heat for about 20 to 30 minutes. After 10 minutes baking you could take the pie out and spread some butter on it, but I do not do...
Read moreI am a student currently studying my final year of A levels. I was driving up to Chobham for a dentist appointment when my car decided to completely breakdown. I went into Pasha to ask for the street address as I needed that for the RAC. The service I received after was simply nothing short of sublime, phenomenal, outstanding and amazing from Pasha café. As said before, I am a student and I study business. Pasha is quite literally how I envisioned a business to be when learning my specification. The workers had seen me stressed and anxious, they gave me on the house food and drinks, I will forever be grateful on how they handled the situation as I believe my day could have gone a lot worse if I had not gone into Pasha café. I was in the café for a solid 7 hours (having to wait for rescue) in the whole duration of that time Pasha felt like a second home. The décor of the business is amazing, the food is brilliant and the service is completely top notch. I also met the owner and he went out of his way to help me as much as possible. It is no wonder the business is complete perfection as it has an owner that engages with customers and would go out of his way to make a customer service simply amazing. Honestly, I am shocked as to how fantastic this business is, if you have not visited, what are you waiting for? Like honestly, cancel you're plans and visit! I live in Guildford and visiting to Chobham is around a twenty minute drive, I would make that journey every day if I could, and that...
Read moreNice cafe made even better by first day of lunchtime summer sun on a Sunday. I thought it would be churlish to not try something Turkish so , vaguely authentic, when I dropped in on a bike ride. Decent enough Turkish breakfast but it disappointed as I was asked if Iiked chilli and replied in the affirmative. Unfortunately I either like chilli too much or else our ideas of chilli strength and taste don't concur. Coffee was only reasonable. Service was good and I'll definitely return.
Service and ambience great and I really appreciated the complimentary Turkish delight. I'll have to ride to Chobham more often!!
April 2023 It's nice when you're a fair way away from home and you're recognised. The story above re. chilli has faded from my memory but the chef came out of the kitchen and related it to me so it's nice that customers aren't simply nameless/faceless entities. In this case I'm the nameless/faceless one as my recollection is sparked by a reminder to update this entry/review!!
Importantly service etc was good so...
