Meandering north toward Huntsville after a great two-day stay at Auburn University, we stopped in Alexander City for a late breakfast or early lunch. Thank goodness for Google! We discovered this incredible gem hidden away in a little strip mall. Carib offered delicious cooking, Caribbean style. Owner Dianne could have been a Southerner rather than an Islander but for the seasonings.
We stuffed ourselves on everything she brought to the table from steamed chicken to cabbage to pelau (deliciously seasoned black-eyed peas, carrots, and rice) to meatloaf, cabbage, and salad. Was hard to pass the snapper.
Because we simply couldnāt eat more, we had Dianne pack six more pieces of chicken, more cabbage, a small bag of each of her freshly prepared sweets, and two servings of what she had just cooked for tomorrow--curry crab and dumplings. Before we reluctantly departed, we grabbed 2 bottles of island sodas and purchased one of her three books of poetry.
The thought of driving back to Alexander City from Huntsville is daunting but may be a necessity. We are less than three hours away from the restaurant and are already hungry for more. All who live in Alexander City should rush to embrace this incredible eatery. Itās not the standard meat-and-3, but undoubtedly, you will walk or waddle away completely satisfied

Seriously, anyone local or traveling through the area, you canāt miss this opportunity. While this is not the typical cuisine that youāre going to find in central Alabama, you owe it to yourself to check it out. All food is prepared fresh and made from scratch each day. This is a small, family restaurant and that love and care shines in the tasty food. While some may worry of spicy food, this is rich and flavorful without an overpowering spice. They do have homemade hot sauce available if you do desire the heat. Iāve included some photos of my meal. Everything was delicious. No doubt they have something for everyone. Chicken and dumplings are a frequent request as I overheard other customers place their orders. If youāre willing to try seafood you will be pleased. The snapper was prepared perfectly. I had the curry chicken with rice. It came with pumpkin and trini bread (like soft pita). The price was VERY reasonable. The owner asked if I was going to be in town tomorrow. Passing through on business, I regrettably was not. Evidently if you call into the restaurant and order a menu item, that is what her special will be the next day. I will definitely go back when in town again. I understand during COVID the family supported the nurses and public safety of the community.
