Today we visited a new place that recently changed ownership. It used to be called Cowboy Sushi, but now it’s Sobee Sushi. The restaurant made a great first impression — clean, nicely set up, and a good size. As soon as we sat down, they served us a complimentary soup. I’m not sure what kind it was, but it was absolutely delicious. The staff was very friendly and attentive. We ordered edamame, a Mexican roll, and an Amarillo roll. Since the rolls are handmade, we expected to wait a bit, but the timing was very reasonable. While waiting, we mixed some soy sauce with lime and wasabi for dipping. The edamame was lightly seasoned with salt — simple but good. The Mexican roll had just the right amount of spice: flavorful without being overwhelming. The Amarillo roll was the perfect contrast — slightly sweet, fresh, and well balanced. Overall, we had a fantastic experience and will definitely be coming back to try more rolls and explore the menu further.

Newest sushi and SE Asian spot in Amarillo. I came in to try a few items. Service was excellent - friendly and helpful. I tried the Sobee Noodles, Tuna Tataki, and Diablo Roll. The freshness and flavor of everything was excellent. My favorite item was the tuna tataki - it was seared perfectly and the serving really brought out such fresh flavor combos. I normally prefer other noodle types to glass noodles, but the Sobee from the house specialty offerings was great, especially the aromatic onions. They will have their liquor license soon. Definitely will be back.

We went here for lunch. Food was amazing. We had the buccees roll. We will definitely have it again. Gyoza and egg rolls are very fresh and great. My wife had the chicken pad thai the noodles are fresh and great flavor. Our favorite if the tuna Tataki with added jalapeño. We order it everytime. The cashew chicken is the best I have ever had. I will probably be ordering it everytime as well.

This place was fantastic in every way. Beautiful restaurant, very clean, super friendly staff .... and the best part .... the sushi. This place puts 5 star dining to shame. We eat lots of sushi, but have been bored with it, or totally put off because of some places here in Amarillo. So we decided to give a new place a chance and we are sooooo glad we did. THIS is where to go for good sushi in Amarillo. The super white hiro was soft, buttery, creamy and very fresh. The kissing roll was also excellent. The rice was soft and flavorful and seasoned just right, and the seaweed wasn't tough or chewy like jerky. They use very fresh ingredients, and it makes a huge difference. The udon noodles were perfect, as was the sauce, and it wasn't swimming in basil or jalapeño like most places. The waitress/hostess was very kind and smiling. She kept our drinks full and made recommendations that fit. She knows the menu and answered all of our questions. The sushi chef is an artist, and knows what he is doing, and was also very friendly with us and other customerz while we were there. We could not ask, or pay, for a better experience. They have a very large selection. We cannot wait to go back and try more things. Thank you...
