New China Chef — Restaurant in Apex

I knew something was different when I saw a Chinese restaurant with a 4.5 rating on Google. The norm for these places is about a 3.5 to 4 - if they are really good. First thing that surprised me when I went in at 2 on a Tuesday there were 9 full tables and 1 open which I promptly grabbed. The quality of the food that hit the table was literally on par with Red Dragon in Raleigh, voted Downtowner Best many years running(this isn't sponsored I swear lol). The grilled peppers and onions that came with it were fresh and large, not like the pre diced stuff that come with so many meals at restaurants like this. I got the Hunan Beef, very spicy as they told me it would be, and delicious! The beef didn't come in a pile of gelatinous sauce like the other places. The beef was tender. I have a habit of getting multiple spicy mustard and soy sauce packets for the food at these places but here it was totally unnecessary. Food was perfectly seasoned.and they weren't afraid of flavor. So I order here weekly and and enjoy the dishes . When we first started coming here nice chunks of chicken and tender and moist. The orange beef was the same way tender and nice big pieces. Well this week my chicken were all little crumbs and mostly coating , this was same for the beef. Also both dishes were so chewy disappointing.
