I'm stuck on what to say because all I can keep thinking is "Wow! These folks are doing things right."
Brisket taco had a nice smokiness with a subtle vinegar flavor.
Carnitas taco had a lovely flavor profile especially highlighted by the char.
Elote roasted perfectly, not too much cheese, perfect amount of lime juice
Coleslaw was one of my favorites! I'm still trying to figure out their ingredients because there's one flavor that was a main character but so well balanced. It was just different enough to elevate this side dish.
Baked Potato Salad - basically a baked potato as a small side dish. Personally too heavy on the dairy aspects and not enough green onions or chives. But I'm also not a huge baked potato fan in general so ignore me on this one.
Cucumber jalapeno margarita - finally found a place that does margaritas the right way! I've tried so many around Bellingham that fall flat. I would happily order a pitcher of this cocktail if I could.
Classic Margarita - would say the same as above. Very well balanced.

Read moreWe went on a Wednesday at about 5pm and the restaurant was maybe half full. Wanted the ribs and they were solid out. Ok I get it, so I got brisket and chicken. Also ordered an appetizer of chips and queso. We sat there for 45 minutes with no appetizer or interaction with the staff. I had to be that dude to wave down the waitress to inquire about the appetizer. She went to check and oops, they didn't have any chips. Our food arrived about 15 minutes later. It's bbq and sides and should be already prepared. The Mac and cheese was and potato salad were tasty. However the brisket was dry. The chicken was a shredded (not mentioned on the menu) pile drenched in bbq sauce. The BBQ sauce varieties they offer are also primarily vinegar based East Coast style and not Texas style like their name would imply. The corn was also good but not worth a special trip or the wait. Good luck in glacier gunners, it's brutal out there for restaurants. Winter is coming.

Read moreMy wife and I stopped by on our way home from a hike around Artist point and ate their for the first time. We both had the two taco plate that comes with two sides and what can I say, it was AMAZING. I got the smoked brisket and smoked carnitas tacos with sides of Elote and baked potato salad and I couldn't have been happier - the tacos were perfection and they don't scrimp on the fillings. It was also some of the best potato salad I've ever had and hands down the best corn on the cob I've ever had (warning - it has kick). They also have a good quality selection of beers on tap which hit the spot after being in the sun all day. The ambience was excellent as we were able to sit out on the side deck in the shade by the grape vine and the staff was super friendly and easy going. We undoubtedly will stop there next time we go to Baker but we'll likely make the 45 minute drive out for dinner and hopefully sit out on the balcony again and enjoy the decorative lighting and the wicker gas fire tables.
