I had the displeasure of trying Edge for the first time this week. I should preface this by saying that I've visited possibly every other restaurant in the Main Street Bethlehem area, and none of them have driven me to write reviews. However the experience at Edge was so much worse than at any of their competition that I felt it necessary to do so in this case.
When we arrived we were presented with a two menus: the standard menu, and a "pre fixe" special menu they were running. So we prepared our order, we ordered the full Pre Fixe meal, and additionally an appetizer from the main menu. It was at this point that the server informed us "Actually, 'The Kitchen' doesn't allow our customers to order from both menus. I think it's dumb, but these are the rules." When pressed for more info about how we could order appetizers (because we were, in fact hungry), the server said "oh, there are appetizers on the pre fix menu," and pointed to the salads we already ordered. When we pointed this out, and asked if it was possible to buy any more food than what we had already ordered, she said "Oh. No."
This absurd establishment literally refused to serve us more food. We weren't trying to substitute. We weren't trying to take advantage of any promotion. We just wanted to not leave our dinner reservation hungry. And we were told no, they didn't want our money.
This was only the beginning of the abysmal experience. I'll try not to be too verbose, but the following are all worth note:
Our entrees took over an hour and a half to arrive at our table. We were assured by our server that they would be "right" out every 10 minutes however. When they finally did come out, she assured us that the wait was only so long because there was a large party in another room. The seasonal drinks are overpriced and terrible (to the point where the alcohol was all but undetectable). The food was hit or miss: there were occasional up moments (e.g. the salmon was cooked beautifully), and many lows (e.g. the pork was terrible and dry). This seemed more egregious than normal since they were heavily advertising this pre fixe menu. One would think they were putting their best foot forward, in which case I would hate to try anything on their normal menu. My wife's dessert was a roughly-three-inch-wide puck of slightly-gelatinous caramel. It looked like someone had managed to caramelize the top bun of a McDonald's hamburger. I'm not even angry, just... confused. They don't take discover. Not a big deal, it just seemed like having my payment rejected was a fitting end to the evening.
Overall, the service was abysmal, whatever stick the so-called "Kitchen" is sitting on is clearly deeply-embedded, the food was mediocre, and all of this is made worse by the fact that you can look out any window in the building and see people dining at better restaurants. If you are considering dining at Edge my recommendations are:
*DON'T.
Instead, try any of the dozen good restaurants within a block of it. Apollo Grille, Twisted Olive, Melting Pot, Cachette, Tapas, McCarthy's, Brew Works, etc. I will happily visit any of those other restaurants again, but this will be my only...

During one course, the waiter tried to take my wine glass away. I showed him I still have plenty of wine in the glass. he asked if I can finish it now so he can take the glass. So I have to chuck it while he was standing next to me I accidentally spilled my water during dessert. There was nobody help cleaning up or refill my water (even during the 30mins I waited for my correct bill) The first check the whole table got showed $85 per person. I pointed that out to the waitress. Later they brought another check back. I thought the second check was correct after fixing it so I paid. Then realized it showed $80 per person We waited for almost 30mins just for the correct check. After getting the correct one they said they will avoid the second check charge. The waitress only apologized to people next to me thanks so much for their patience, and pointed me to other customers and said "this girl found out the problem". It feels weird that I wasn't part of the customer that got the apology. I never get a direct apology or appreciation or compensation, whereas other customers got those and their coffee waiver fee as thanks for their patience. Remember my water was spilled during dessert? it was never refill even during the time I waited for my correct check, so I have to chew on ice cause I was so thirsty Two days later I found out I was charged twice on my credit with the incorrect bill and the correct bill. I called the restaurant asking to fix the problem. I was angry after all the waiting, unfair treatment, and the double-charge. So I spoke with a serious tone but the manager on the phone kept accusing me "yelling" at her. I asked if she was there the night all the check problem happens, she was not. So I explained what I experienced and I was not yelling and there are problems I experienced need to be fixed. She kept asking me to understand them, and shaming me by saying "i will use a lower voice because this is how I communicate with others". There was no sense of sorry or empathy for what customers experienced at this restaurant.
Objectively saying, the food was good. But I think overall my experience here was not great. I don't know why I was treated lighter than other customers. When the problems happened, I deserve a nice attitude since all of these check issues are caused by the restaurant. But during the time I tried to communicate with this manager, there's wasn't any sense that she actually feel bad of people waiting 30mins after dinner, for multiple times, just to get the correct check, or my unfair...
Read moreWe went here a few days after Christmas. We were a group of four adults and one 3 year old. I was very nervous because this seemed a nice restaurant, had no kids menu, and I was worried about bringing a small child but circumstances necessitated it. The restaurant was so accommodating - bringing her some plain pasta, sitting us in a corner area where we would be minimally disruptive, and being so kind to her! We would have left if they’d said something when we walked in but they just greeted her happily. Don’t get me wrong, this definitely isn’t a kid oriented place, but the fact that they were so graceful about it made me love them all the more. It helped that my daughter behaved, and we took her to the hall outside the restaurant to run around a bit halfway through to aid in that.
In addition to that, the service, food, and drinks were spectacular. We sampled wine and nonalcoholic mock tails, all were great. The tuna tartare was our favorite dish, and one of the best dishes we’ve ever had. We also really loved the pork belly and mushroom risotto. We tried the gnocchi, curry, oysters, and brie too. My dad said the oysters were amazing, including the sauces, if a little small. The curry was a generous portion and spiced just right. Personally I wasn’t a fan of the baked Brie, I thought it could use a little something extra either salt or herbs; it was good, just not as good as everything else. We ended with the chocolate cake - rich but fantastic - the lemon bar and the special peppermint cheesecake. No one left hungry or dissatisfied, all of us would return.
