Was waiting for them to open and try their pizzas. Finally visited today and order 2 pies: 1. Traditional Margherita Pizza and 2. Margherita with Gluten-Free Cauliflower Crust and Vegan Mozzerella Cheese for lunch around 12p.
Time - They quoted 20-25 minutes. I got there early, probably 15 min and it took another 5 min+. Soo, I would suggest whatever time they quote is about right.
Environment - The pizzeria is nice being new. There are a few small tables and seat as well as sills to sit on, but really more of a carryout place. They have a single brick oven.
People - The staff was very nice both on the phone and in-person.
Flavor - The pizza has a very good flavor and what I would have expected, both crust and sauce. Everything was fresh. The sauce is very blended, so not a lot of tomato pieces in it and the pizzas I got. The dough is firm, but soft. The middle is thin, less than 1/4", but puffy and airy outside, which I would have expected. The bottom was perfect and nice light leoparding and consistent throughout. Even though these ovens and cooking these types of pizzas is very hot (800-1000F) and only taking ~60seconds, don't expect it to be piping hot, as an American pie. It was/will be warm. Pleasant, but I would have expected it a little hotter as right off the press, in the box, and only 10 min. drive home. Maybe this is typical and in Naples/Italy? I have 2 ovens at the house (propane and wood) and the pizzas come of extremely hot, so don't know. It wasn't bad, just not to expected. Wife said pleasant.
Offerings - Don't expect a huge menu and multiple pages. Once page, very streamlined with 12" or 14" pizzas. However, many things you do not and cannot get at 95-99% of pizzerias....fresh basil, pancetta, prosciutto, mortadella, burrata cheese, etc.
Pricing - These are boutique pizzas, so don't expect a $5-6 hot and ready and to feed an army of rat...i mean kids. So expect to pay a premium, not only here, but any boutique pizzeria to bring you a piece of real Italy. 12" traditional Margherita is $14. Califlower crust is $2 and Vegan Mozzerella is another $2. So, the 2 pizzas ended up running $32-$34. Looking online to other boutique sources, like California Pizza Kitchen, etc., they charge $16+ ea, so pricing IS on par with others.
Overall - Very pleased with this place and when not making my own at home and dough available, will definitely be using them again! Next time, I'd like to try their Neopolitan. Since there are no halves or decimals, I give it 4 of 5 stars!!

Read moreWe thought this was a pizzeria; something dark and very brown. We pulled up and were kinda taken back as it's very bright white and cool grey inside. Well. That was a surprise. Not pleasantly, not unpleasant just a surprise.
We were greeted and sat ourselves. We ordered and the pizza came out pretty fast. That was a pleasant surprise. Our server was also taking orders at the counter. She was super friendly. All the staff was. They came around to check often, offered us a house wine to sample. Always smiling but never in that super fake 'im smiling because we made eye contact way' they are genuinely happy to be serving.
The food, wow. The pizza was so delicious. This is some of the best pizza we've ever had. Hands down. The crust is just crispy with the chewy inside. The toppings are flavorful and fragrant. Even through my stuffy nose the fresh basil was cutting through. We had a Veggie pizza, I forget it's name, and cheese pizza and a pepperoni pizza. Each had its own unique flavor. I've never tasted anything like that. Normally pizza is pizza with the added flavor of its toppings. Each of these was unique. It was a treat to claim my dad-tax as I stole a slice from the kids to taste the different pies.
The tables are small. Not gonna lie about that. The chairs aren't the most comfy either, but they work. That said, we had such an amazing experience with the pizza the chairs didn't matter. We came with a family of 5; myself and my wife and our 3 kids. We managed with the table size.
I've been thinking about this pizza since we had it earlier in the week. It's so good. The sauce, oh, just the right blend. Not a sweet sauce at all, with the sugar added. Nope. It's tangy and savory and compliments everything. The tomatoes are intentionally selected to maintain a flavor profile (we talked to the chef) and compliment the rest of the pie. Each pizza is crafted with love, this was made very clear when we stopped to talk to the chef on our way out. His passion shines through and you can taste it in each bite.
The next day the crust gets a little chewier but the flavors are still there. Perfect. It's such an amazing pizza experience. If you're a pizza snob you'll love...
Read moreWe stopped for a carry-out. The few tables inside and out were being used by people waiting for their carry out. The lady taking orders was neglectful explaining the menu. How is it that a pizza place does not offer a 2-topping pizza? We wanted Green pepper and bacon, she charged us for 3 toppings. When we looked at the receipt, we questioned her. She nonchalantly said "oh, we only have single topping pizzas or 3 topping pizzas" Rather than explain the menu and charge differences while ordering, she assumed we knew their menu and overcharged us for 3 toppings. The cook came out and acted equally annoyed when we simply didn't understand. They didn't offer drinks, salads, or anything else to the order. They offered no explanation of any kind regarding the menu. We had never been there before. We won't ever go back. There's more friendliness coming from the birds outside, and I bet they'd offer more help than the workers. I can't offer any more info about this place. I don't know if they cater, if they are handicapped friendly or if they have weekly specials- new customers, you're on your own if you stop in here. The cook said "this will be the best pizza you ever had!" Really? Hardly. They have brick oven pizza. It wasn't bad, but they skimped on the toppings we did get, they skimped on the sauce, and it was dry/ tough- like it was left in the oven too long.
