I was not thrilled to wait outside, standing in the driveway to their small parking lot (the benches and sidewalk were full when we first got there), but breakfast was worth the wait. Once we were seated, service was warm and quick, and because the dining room is pretty small, our food came quickly.
Everything was cooked perfectly and half of us actually said out loud, "I'm full but this is so good I can't stop eating!" The hash browns were brown and crispy outside, creamy and soft inside. The machaca was as good as any machaca I've had; it's not its fault it's machaca and not chilaquiles. The ham steak was almost the size of the plate and was juicy and flavorful. I didn't get to sample the bacon or French toast because even the slowest eater in our group just inhaled the food.
The chilaquiles were so amazing they deserve their own paragraph. These were the Platonic ideal of chilaquiles. The chips/tortilla strips were just the perfect texture, still substantial and chewy in a good way, neither crispy not soggy. The Joe's in Templeton and Paso usually has a waiting list but I've been able to get right in to the one out at the airport. What I really love is it doesn't matter if you go to the original Joe's Place in Paso, Joe's Other Place in Templeton or Joe's place at the Niner Diner out at airport you will always have consistency. The same food could be made at any if the three locations and when put next to each other you would think they were made all at once in the same kitchen. Their bacon, the centerpiece of breakfast, was thick cut and the perfect combination of crispy-chewy. I was served 4 whole slices of this magic bacon along with eggs, potatoes, and toast.
On top of that, the service was top notch. Not only was our server friendly, but also, she anticipated our needs and didn't forget a single request. The food was in front of us before we were halfway through our first cups of coffee, which I never saw the bottom of, by the way. We had 2 former servers in our party and both of them were highly impressed with her. If I could rate her separately, I would give her a 10.
