The Cuvée restaurant is owned and run by Gilbert Henry and is located in the small town of Carlton, Oregon. He is a native of Alsace France. He graduated from Centre Apprentisage Professionel in Colman in 1978 where he learned his cooking skills. He opened Cuvée in 2004 and is open during the summer, late spring through Labor Day for dinner: Wednesday-Saturday from 5:30 -9:00 pm and Sunday from: 5:00-8:00pm Prix-Fixe Menu served every day! Then you have your choice of desserts: flourless Chocolate Cake, and that’s just one of many desserts they have to offer. They have vegetarian options available just ask your server. Each evening Cuvée offers a $18:50 Prix-Fixe dinner special. You get your choice of Hors d’ oeuvre or dessert, soup or salad and your choice of Entree or choose A La Carte! That’s quite a deal when they charge $12.00 to $14.00 for an Entrees. They have a small list of wine, you can get a bottle of wine for under $20.00. We were greeted by Chef Henry, he was charming and funny. You can tell he has a passion for excellent service that does not feel forced or overwhelming. He was warm and inviting.
The atmosphere is top tier. The paintings on the wall are so interesting.
We started with the escargot. I have never had escargot before but this dish was exquisitely prepared. The bread was delicious on its own, then we dipped it into the sauce that occupancies the escargot and it shoots the flavor to the moon.
For the entree I had the Chilean sea bass, I ordered it because chef Henry is known for his fish and I was not disappointed. Every thing on the plate worked perfectly together. Every single bite was exactly right.
My wife had the filet mignon and the chef was kind enough to ensure she knew it was pork. The dish was perfectly prepared.
We finished with the creme brulee and it was exquisite.
Every aspect of the service, atmosphere and food was perfect in every way.

Cuvee is the best--always! For appetizers, we shared the most unusual sauteed oysters I've ever had and the best! We also had escargots with a hint of anise in the sauce. They were so good. I had the special salmon from Canada with a light sauce--it was lovely. My husband had the rib eye steak with little roquefort sprinkles, cooked perfectly in the French manner with the most amazing pommes frites ever! How do they get them so crispy on the outside? Perfection!
Instead of dessert, (I had one earlier that day when friends took me to lunch), I had an Armagnac and my husband had a Spanish cognac.
The people across from us were there from San Francisco. They were very smart, as they had 4 dishes all in the center of the table which they were sharing.
The owner and chef, Gilbert Henry remembered us from our anniversary dinner a couple years ago. He remembered making me a blackberry martini. He is a delightful man from Alsace, with a quiet, subtle wit.
Cuvee is a wonderful restaurant. It is great with several friends, and it is wonderful and romantic with just two.
