Great location: near the Caldwells, Verona, C.G. and Mtclr. - plenty of parking - located in a mini-strip mall. Family owned, not a chain. Excellent service. I picked up 3 items for Super Bowl: a pinwheel rope sausage “Geno’s blend”, a bacon strip cross-hatched 3 lb Filet Mignon roast, which actually looks like a small football (good for 5 ppl), and a few ovals of Burrata cheese. The cheese was slightly off my wife noticed slight sourness. It didn’t bother me, I ate all the rest but she is extremely picky. I guess it could have been a little fresher but considering how busy they must have been leading up to SB, I can’t lay blame. Mistakes happen once in a while and I allow for that. Onto the beef! I’ve had their Filet Roasts a few times and they are incredible. Like velvet. This is a very easy cut to cook and not mess-up, make SURE to use a meat thermometer. The bacon cross hatch looked amazing and kept the roast nice and moist. It looked like a little football! I cooked that on my pellet grill so I got some nice smoke flavor in there. Cooked at 275 degrees for 2 hours, lid down, then cranked it up to 350 for about 25 minutes lid down, pulled it off when internal temp reached 135. Let it sit. Then I threw the Geno’s pinwheel in a regular frying pan, no oil, right back on the grill, lowered temp back to 275, lid down and pulled it off after 45 minutes. I didn’t want it to crack open and dry out with all the fat running out and that didn’t happen. That’s how to ruin a rope sausage. It tasted fantastic, still juicy,I love the smoke the pellet grill adds to meats, it’s not overbearing. The picture is my midnight snack: I chopped up some onions and peppers, sautéed for about 7 mins, added a little seasoning and then chunks of the filet for another 5 minutes. Incredible. Read moreTwas the night before Christmas, and we had just arrived in New Jersey to spend time with family. We needed a gammon (bone-in ham) joint for our December 26th meal, but no butchers were open or had what we needed.
Despite this butcher shop being closed, the staff were still inside preparing to leave. They kindly opened the door and asked what we were looking for. Even though they had already cleaned their machines and the shop, they went out of their way to check their stock—and they found exactly what we needed.
The ham was larger than what we were looking for, but because it was Christmas, they gave us a discount on the per-pound price and sold it to us after hours.
The result? The most delicious, succulent ham our Christmas has ever seen. It wouldn’t have been possible without the generosity and incredible service of this butcher shop. They know their stuff, they care about their customers, and they go above and beyond.
