Sold raw ribs. Bland greasy meat. 2nd time here. First time they were out of everything except brisket. So I ordered a sliced brisket sandwich. I remember it being fair to middling. Not bad and not good enough to go out of my way to eat here. Happened to be in the area for work, tried it again early Saturday. Unfortunately, everything was available and I ordered ribs, brisket, and sides. Wish they had been out. Will not return. Greasy, fatty, TOUGH, bland, RAW ribs. I posted pictures of the pink. (not smoked pink but raw food pink) Very disappointing. They may be friendly but not efficient. No reason to wait 15 minutes and then deliver an inedible product. Large portions for a decent price. 2 can eat off 1 plate IF the food was seasoned and meat cooked thoroughly. The sides were all canned so no risk of not being done, they were just warmed and scooped. Made a $20 donation to the restaurant for the trash bin to consume. Eat at your own risk and if you think this is a good BBQ, explore a little more.

In the small town of Waxahachie, a short drive south of Dallas, is a great barbecue joint that is well worth the detour off I-35E to enjoy - called Harris Bar-B-Que. Kelvin Harris has been producing his brand of Texas 'cue for a number of years now. And I'll tell ya, he's got it down pat, producing this flavorful stuff all on his reverse-flow pit out behind the store. The brisket was moist and smoky, with a super dark bark (gotta love that!). The sausage was very nice. And the pork ribs were really good. I tried the potato salad and coleslaw, and both were very tasty. And the perfectly-toasted Texas Toast was a great addition. Side note - when you go, you cannot miss the absolutely beautiful and historic Ellis County Courthouse in downtown Waxahachie.

Great little BBQ joint in the Hatch. Great people, the owners are hands on and doing everything right. They are friendly and helpful. The atmosphere is perfect for a great bbq dive. I got some ribs, brisket, and beans and all were fantastic. The brisket has a good bark; moist and a perfect balance of flavor; flaky fall appart goodness. The ribs are fall off the bone; perfect balance of flavor; make you drule good. No sause needed to enjoy but the bbq sause is off the chain as well. All in all everything is worth your time. Go get you some. Update. My favorite Hatch bbq dive is now my favorite Ceder Hill dive. Worth the trip still a great meal. Go check out the new location. New pics added or the inside of the new place.

I tend to visit multiple BBQ places because I really want to find that one joint that will hit the spot for what I call REAL BBQ. To me that is meat that does not require sauce to have flavor and the meat itself to have proper texture from cooking. My safe bet any BBQ place I go to is always the sausage.

Harris BBQ definitely has both of the qualities for a great BBQ. After finding it in a small town BBQ guide, I had to try it. For a month I tried to get there in time as they close once they sell out. Every time I was too late to even get a smell of the place. Finally I have done so, and I can see why they sell out.

Their sliced beef is thick and juicy. Something that most BBQ places over cook in order to have a good bark on it. Harris has a good bark and it still remains juicy. I judge a nice sausage on the casing and inside. I like sausage casing to have that firmness for when you bite into it pushes back with a snap. The interior is not too ground up and in fact actually has texture for meat. Unlike some other places I have tasted.

It is a nice quaint place to have a good bite to eat which is locally owned and family owned. I have no issue with paying a tiny bit more when it comes to supporting and eating here. Well worth it compared to the chains in the area these days.

Harris family, keep the good work up. I hope to see your place expand or grow and am excited...

First of all this is a small mom/pop shop. With that said there is limited inside dining space Do not expect a Soulman BBQ atmosphere. Also I'm sure there is limited storage space for food and most likely cook enough for the day so they are always running out of food, especially after lunch. The drive thru is window order, no ordering at a menu board. Parking is unpaved unmarked gravel lot.

However, the food i have ordered the past few times is to die for. I've been in DeSoto for 40 yrs and I always love Junior's BBQ. This place tastes way better. The lean brisket is moist, the chicken is flavorful, the sweet cole slaw is delicious. The pinto beans and green beans tastes good but it could use a little more flavor. The mild bbq sauce is very good with a hint of spicy. Haven't tried the hot bbq sauce but I'm sure that is very spicy for those who like their spicy foods.
