My family shared two bowls from here and it was nice. The flavors were good, but for me these dishes are all about the broth/soup base. I am a trained cook, and make stock a few times a month to have on hand, so I know what really good stock can taste like. While delicious, each soup we had seemed like it had slightly watery broth. Again, I'm ranking this at 4 stars, and that is a hard score for me to give. The reason they get that is for the take-out experience being a great one, and all of the toppings being fun. The soy egg was particularly good. That said, I wish the soup base had more body to them. A good soup base should be able to stand up on it's own, and I'm not sure these would be there. Still, we'd go here again, and try more options because we've only tried two items so far. I'm very curious about their array of fried chicken, and that will certainly be on our next order, except my partner is GF, so she won't get the full experience. Please patronize this business, because we need good restaurants in the NNE/Western Colchester to stick around and the first 5 years matter. I look forward to having their food again.

I wanted to like this place, it's close and I love ramen. I've seen mixed reviews so I decided to try it myself. We tried the fatty beef ramen and general tso's chicken. The packaging for the ramen was nice, it had a separate compartment for the broth. The beef was flavorless and the broth didn't have much more flavor. I did add soy sauce and Sriracha which made it better. The general tso's sauce was okay but there was only a small amount of sauce. Overall, the food was okay but not good enough for me to go back anytime soon. I know they are new, so they may still be working out the kinks.

JBC brings some variety to Colchester restaurant scene. Take out is very well organized with stackable bowls/dishes to separate the soup base from the noodles, meat, eggs, etc. The ramen soup base has a light flavor with maybe a hint of peanut oil ... Not sure exactly what it is as it is unique and doesn't seem like typical rich pork bone stock base. It's still tasty but not as rich of flavor. The soup dumplings and Taiwanese sausage were good appetizers.

I literally drive by this place everyday and rarely see it open during the posted times on the door. Today, Sunday, November 9th, the posted times are 3:00 pm - 9:00pm. This will be the third Sunday in a row that I have driven by and it was closed. No signs, lights, or cars in the parking lot. I have looked at the sign every time I pass and it says the same thing. I’m beginning to wonder if this place is legit. Big fan of ramen! Wish this place was open on the times that are posted on the website and front door!! Not to mention, if you look this place up on google, it will say open....
