Update 8/24. We went back to give La Casa another try and I am sorry to say were not any more impressed. I had the Carne Asada plate. The meat was nicely cooked, but a little too salty, and not very tender. Rice and beans were once again not very flavorful. I didn't even ask for a hot sauce this time.
Our service was once again prompt and courteous, but we were in the bar surrounded by TV's - ugh.
For me, a restaurant (Like many public places) is a place where there should no sharing of politics, sex or religion. Our server had a Trump sticker on her uniform, and there was a small picture frame that had a little Cat in the Hat character, that said: "I'd rather trust Dr Suess then Dr. Fauci". I realize this is the most Republican county in the state, but I don't want it thrown in my face in a public place. We won't be back.
08/23 - We were told this was the best Mexican restaurant in town, and north side of CS. I hope not. The basket of chips was massive, and the salsa pleasant enough. I judge Mexican restaurants by their rellenos as they are hard to do right. Lots of other dishes are pretty easy to bang out. I asked if they were made in house, as opposed to frozen and was told yes. I was pretty disappointed.
First red flag was that they were stuffed with ground beef and onions in addition to cheese. Traditional rellenos are cheese only, a nice vegetarian option. The beef and onions added nothing. I ordered crispy versus soft and they came neither. Slightly cripsy ends with soggy middles. The real let down was that the chiles were quite crunchy, which is the trick with good rellenos. They need to be cooked enough to not be crunchy, but not so much as to be wimpy. Rice and beans were rather tasteless and when I asked for "extra hot" sauce, they offered the salsa - not what I was after. I find GOOD Mexican places have a firey habanero or some other hot chili based sauce for those of us who like to sweat.
My guest said her burrito was "fine", not a ringing endorsement. Service was excellent, and our server never left the table without taking something with her, one of my pet peeves. There's nothing worse than eating a meal with drinks and lots of plates that just sit there the whole meal. I might go back to give it another try, but would probably try some...

However, our tummies started disliking that decision as were were checking out downtown Monument and drove by La Casa. "Mexican food?" "YEP!" It's such a beautiful restaurant, and I didn't even see the inside lol. We sat outside on a nice day. Now here's the thing. As a former Texan, I'm ALWAYS on the hunt for good Tex Mex or authentic Mexican. When I say the food is good, you just need to believe me. In a state that thinks chopping a few veggies up in a bowl of tomato sauce is salsa, I was very, very happy with the chips and salsa!! It tastes like real salsa! Chips were warm and fresh. The best way to enjoy chips and salsa is with a Peach Mojito and a Pineapple Jalapeno Margarita. Both were delicious, but there wasn't any jalapeno flavor. Just a few rings of fresh jalapeno. I suggest infusing some tequila with the fresh jalapeno to give it a bite! My wife ordered Chicken Enchiladas with Cream Sauce. In Texas, Sour Cream Chicken Enchiladas are a staple, but you can only get red and green sauce in Colorado. No chili con carne, chili con queso, or sour cream sauce in Colorado. The cream sauce here is outstanding! Not quite the same, but satisfied the craving. I had the Tamale and Chili Colorado plate. For the Texans, Chili Colorado is similar to Guiso, or Carne Guisada. It's a deep red sauce, full of flavor. La Casa once again killed a craving I've had. I could seriously sit down with a plate full of the Chili Colorado and tortillas. So good! However, I ordered a $15 dinner plate that had two white flour tortillas rolled up between a craft cheese slice warmed up in a microwave, a sad looking lettuce and tomato salad with white rice that looked like someone sprinkled a teaspoon of tomato sauce at… I had a bad feeling about eating the plate, but I was hungry and pregnant so I ate it. About an hour later, my stomach was aching and cramping - which had been uncommon in my pregnancy - followed by sickness. I called the restaurant to let them know the plate made me sick. Sean, the manager on duty, told me that he didn’t believe his food made me sick that his food was not everyone’s cup of tea and compared the price and taste of his food to McDonald’s saying his food was very reasonably priced (not sure why we ended up talking about food prices?? When I was upset about the quality of the food) and there were other options of food in the area. He told me it was impossible his food made me sick and that he would try the food and call me back to let me know if it was bad. He called me two hours later, continuing to say he didn’t think the food was bad. And said he would call me back again. He never called back after the second time. He was very rude and unapologetic about his food causing me to get sick and made several excuses to avoid being sorry. Not to mention he said there are many women in the world that are pregnant and experience sickness during this time as well as explained what he thought it was like to be pregnant.
