Mimi's Bakehouse — Restaurant in Crystal River

TL;DR : I would highly recommend this bakery and believe it is a hidden gem within town. Great for anyone, even those on diet.

For those who don't mind reading further- I just visited Mindy at her bakery. I was very impressed by the vast selection of assorted pastries and cakes. Of the plethora of desserts I bought, I thoroughly enjoyed each and every one of them. The cake has a perfect taste and texture, only enhanced by the variety of flavors offered. Numerous brownies all with their own unique flavors and charms. Sweet, Salty, Nutty, Creamy. She has it all. There is something for everyone there. Are you on a strict diet? She's got you covered there. Gluten Free, Sugar Free, Keto, Paleo; all sorts of accommodations. Mindy is very friendly and the overall location has a great vibe!...

As a mama whose kids/nephew have food allergies and me myself have a very specific diet, it has been SO hard to find bakeries that make GOOD allergy friendly products. Well my husband picked me up a vegan rocky road brownie the other day from her and my goodness it was DELICIOUS. And I saw she was going to be at a fall festival near my house so I just had to go and I grabbed me a DF banana bread and a vegan apple upside cake. Stopped in for a quick after lunch treat. The owner seemed pretty negative. She was negative about going to local events, and made out like we wouldn't want certain items because they're keto or gluten free as if that's a problem.

We got two "coffee" cupcakes. The cream on top of mine was frankly solid, and off putting. In addition they tasted like pumpkin spice, not coffee. They look good but just don't measure up it seems.
