I’m a big fan of Lechon. I had it in the US, the DR and PR. On beach, in the mountains - spit roasted - wood fired oven - buried and China Box preparations. This was the absolute best. I asked for salt and pepper - the owner told me they didn’t have salt and I wouldn’t need it - he was right - the seasoning and flavor are exceptional!! The chicharron was crunchy and had a great mouth feel. Not too hard - not too chewy or fatty - just perfection. The meat melted in the mouth - you could have eaten with a spoon - no knife needed. I was disappointed to see a two star review but then saw it was from someone who went when they were closed (that’s not fair!). I may go tomorrow and buy another pound - why not!
