Let’s start with the most important thing - the wine list. Carefully curated and something for everyone. HUGE selection of wines by the glass - sparkling, white and red. The list includes California, Oregon, Spain, Italy, South Africa and France. The wine list will bring us back.
Next up is the food. Impressive, but small, list of cheeses and meats. Creativity in the list and accompanied the wine beautifully. The carmelized onion chutney thing was insanely good
Decor - very well done. Modern and clean, making wine the center of the design. Comfortable setup. Makes you want to linger for hours.
Staff/Owner - everyone was friendly and we were greeted as we walked in. Our server knew enough about the list to get by, but not a wine expert. We assume this will improve over time. We know enough that we did not need her help, but good luck to any wine beginners if you have anyone other than the owner. Speaking of the owner - lovely. But play dumb. She spent a lot of time (and gave tastings) to the couple next to us who engaged with her and asked questions. Despite being there before them, we did not get the same attention. Our only guess is we were not curious enough, so our advice would be to ask questions and get her attention. I think her name is Alana - she never introduced herself - as we just overheard the staff mention it.
Overall we recommend. We will be back. The owner needs to train up the staff and relinquish some control. And pay attention to everyone. They...

The only option to respond to your post is here. I am surprised you do not recall our last conversation as it's still very clear for me. I booked Trellis in October for my husband's surprise birthday party. I requested a contract weekly from you and, given I was spending thousands of dollars, that is expected but you never delivered on that. Then nine days before the party, you and your partner, tried to change the terms of our verbal agreement. A verbal agreement is a contract by law, but all you could say was "I misspoke." After you and your partner suggested two new prices, which would have cost 25%-30% more than the premium price I already agreed to, it was clear to me 1) you could not ensure the experience I was seeking for my guests and 2) I could not trust your accounting at the end of the evening. I had no choice but to move my event to another location in just one week.
The good news is I moved to another wine bar where the owner has 40 years' experience in the hospitality business. They delivered a superlative experience, my guests were delighted and the cost for serving brand-name premium wines and sprits (not closeouts from brands no one has ever heard of) was less than half of your original price, including...
Read moreEdit in response to owner: Despite your insistence that the pours are not overpriced, I beg to differ. I've been to several other establishments in Denver with more appropriate pricing. As for the dessert, If it was homemade, then maybe you should purchase from a big box store because the desserts were embarrassingly bad.
Sometimes negative reviews are warranted.
Very friendly staff providing pours that are too expensive. My biggest complaint was the money I spent on an absolutely inedible dessert. I ordered the 2 mini cakes/cheesecakes and they were 100% straight out of a Costco or Sam's club . They were old and had absolutely no flavor. I didn't eat the rest after a few bites and neither did my friend who I was with. After seeing that they were practically untouched, the employee serving us didn't ask if we enjoyed them or offer anything in return. I live so close but this is the 2nd time I've been there, and I won't return . Better options elsewhere...
