The shrimp were perfectly seared, tender, and packed with flavor from the guajillo achiote sauce, resting beautifully on banana leaf with onions, rice, and plantains. Every component complemented the next smoky, sweet, and savory all in one dish. You can tell Chef Eddie Vargas really understands how to balance flavors while keeping things authentic and soulful. Right away, they hint that things are different when you get salsa with wheat chicharrones instead of chips. The food was an authentic but exciting twist on Mexican favorites. The servers were very attentive and nice.
I really loved the gobernador taco with shrimp, poblano, and cheese. Fried in a blue masa tortilla, it was heavenly. The Milanese taco was great as well. Also loved the aguachile macho - it was an amazing blend of flavors and also way more than me and my friend could eat. I also loved that every table had a container of salsa macha right on the table.
