In the heart of Dublin, tucked away inside The Shops at the Square, lies what I can only describe as a pastry lover’s promised land. I wasn’t even looking for it. I was on my way to Farm to Toast when an intoxicating aroma caught me mid-step. Like something out of a cartoon, I followed that buttery, sugary perfume down a small hallway until I stumbled upon a door quietly hiding Sprig Dessert Bakery, a secret temple of flaky, gooey perfection.
The moment I took a bite of their Cinnamon Bun with Cream Cheese Icing, I knew life as I knew it was over. The dough was so buttery and pillowy it felt like biting into a cloud that had been basted in caramelized sugar and baked by angels. The icing wasn’t too sweet or too thick, just the right whisper of tangy cream cheese melting into every golden layer. It was chewy and soft in the center, with the perfect crisp around the edges, that rare balance that sends shivers up your spine and makes your pupils dilate in disbelief.
But I couldn’t stop there. Every pastry at Sprig feels handcrafted with reverence. The Pistachio Honey Cardamom Croissant flaked apart like golden paper, releasing a perfume so fragrant it almost felt unfair. The Almond Bun with Orange Zest Glaze was a buttery spiral of citrus sunshine. The Bananas Foster Tart had a caramelized edge that deepened with every bite, rich and warm and impossible to forget. And the Lemon Meringue Cruffin, crisp outside and creamy inside, was a bite of pure, zesty euphoria.
Sprig isn’t a sit-down spot. It’s a portal for your tastebuds. You grab your box of treasures, then head over to Farm to Toast for a coffee and let the reality of what just happened sink in. The pastries are so good I’ve become like an apostle spreading the good news of Sprig to everyone I know. I tell people not to walk but to run to Sprig and discover what it truly means to live.
Other bakeries are fine, but after Sprig they just feel like sugary imposters. I’ve genuinely considered naming my firstborn Sprig, but honestly, it might not even do this...
